How to Cook Pantry Staple Recipes: What We Made In March 2020

Saying HELLO to everyone from our little isolated homestead! I hope everyone is safe out there and staying indoors with the COVID-19 coronavirus spreading. We are staying positive here… and very socially distanced. The cats are exceptionally happy about this fact, and have become cuddlier and cuter than ever (one major bonus)!

Its been almost 2 weeks since we’ve bought groceries, which is nuts! I stocked up on pantry essentials and frozen fruits and veggies before we isolated, but have now found myself meal planning without fresh ingredients. I normally load my cart full with fresh produce every week, so this is a major change in the way I’ve been thinking about cooking and preparing meals for us.

With all the life disruptions lately, it feels good to stick to some kind of routine.. . for me that is Meal Prep Sundays. I find it very comforting (and time-saving) to batch cook all our breakfasts, lunches, and dinners on the weekend so we have easy meals to eat during the week. Here is what I am planning for this week… hopefully these will give you some meal inspiration for your quarantine too!

—Breakfasts—

Peach Cobbler Overnight Oats

Brett loves these overnight oats, so I try to make a new variety for him each week. I have about 7 peaches in my fridge right now that need usin’, so they are going straight into this Peach Cobbler Overnight Oatmeal! Also the little bit of vanilla yogurt we have left expires soon… so that’s perfect to use in these overnight oats. I love how easy it is to make this in 15 minutes and have his breakfasts taken care of for the week.

Hard Boiled Eggs

Check out my recipe for Perfect Easy-Peel Hardboil Eggs Everytime- I swear by this method! A simple hardboiled egg (sprinkled with salt) will make a good breakfast this week, as we have a dozen that expires in a few days. Better use ‘elasagnam while we can!

—Lunch—

Creamy Lasagna Soup (Dairy Free)

This Creamy Lasagna Soup is one of our favorites and we have most of the ingredients for this one. I normally use crushed lasagna noodles in this, but I’m out of those… so I’ll swap in radiatori pasta as its kind of a fun curly shape. Last week I bought a few bags of carrots, onions, and celery and pre-chopped them into freezer bags. That way I can add some fresh veggies into my soups later in the quarantine (however long we are here)!

I actually made this Creamy Chicken Soup Recipe a few weeks ago and froze some extra jars of leftovers. Brett will be getting this for lunch this week! It has about 10 different veggies it in, so its a great and healthy soup. Should fill him up until dinner ­čÖé

Crispy Baked Tofu – Easy Sheet Pan Dinner

Another one of our favorite meals – this Easy Crispy Baked Tofu comes out perfectly crunchy on the outside and tender in the middle. The great part about tofu is that you can spice it anyway you like! I have been preferring a Sweet Chili version lately, but tofu is versatile enough to taste good in whatever you want to marinade them in!

Perfect 5 Ingredient Marinara Sauce

I’m making a giant batch of my Perfect 5 Ingredient Marinara Tomato Sauce. I literally have a 100 oz can of San Marzano tomatoes from Costco, and the whole thing is going in the sauce :)! I’m quadrupling the recipe, and freezing the rest. I don’t have any fresh basil, but I do have some frozen basil from my garden last year that I can chop up and add. Also, I’ll be adding a pound of protein to this… lentils work really well in a marinara!

—Weekend Brunch—

4 Ingredient No Knead Breadeasy no knead bread

Our absolute go-to bread recipe – 4-Ingredeint No Knead Bread! I’ve been working on a sourdough starter this week, so I may play around with using that in the dough for this bread. This bread is great any day of the week – perfect for toast, with an avocado mashed on top, or for an egg sandwich!

Jammy Blackberry Oat Bars

YUM… I made a batch of these Jammy Blackberry Oat Bars this week, and we are really enjoying the leftovers! Great for a mid-afternoon snack or dessert. I used my Easy Blackberry Chia Seed Jam that I made a few weeks ago, but you can use any jam or jelly you have in your pantry.
