Our garden cucumbers are always super productive all summer long – thanks to my husbands green thumb and our bees (love my pollinators)!  This cucumber salad is a fantastic way to use up those garden cucumbers, and can be made with your favorite brand of plain Greek yogurt.

This creamy cucumber salad with Greek yogurt has been made time & time again in our household. I make it for summer cookouts when friends are over, or just as a weeknight recipe when I have extra cucumbers. The combination of the Greek yogurt, dill, cucumber, and onion is classic. It’s a great light tasting salad to serve with heavier fare.

  • Cucumbers, Onion, Fresh Dill 
  • Greek Yogurt – make sure it’s plain and unsweetened!Ā  You can use a fat free Greek yogurt like this one (it’s our favorite!) or a full fat yogurt too. Make sure you get Greek yogurt and not plain yogurt, the thickness really makes this dish fantastic!
  • Rice vinegar: I love this sweet & tangy rice vinegar, I always keep seasoned vinegar stocked in my pantry for dressings and salads.
  • Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the raw onion in the salad.
  • Granulated Sugar
  • Sea salt and black pepper

A Make Ahead Cucumber Yogurt Salad for Entertaining

  2. Taste and adjust seasoning, adding more salt or pepper as desired.
  3. Refrigerate for 1 hour before serving.
