We had a very successful garden season this year, and our cucumbers were the most productive crop. I feel like every time I went into the garden I had a few more cucumbers to pick. The vines actually grew out of the raised garden beds and about 15 feed up the rocks next to the beds. Needless to say, I wanted to create a fun and delicious pasta salad with all the cucumbers we got this year.
What’s In This Cucumber Pasta Salad Recipe?

- Rotini: You can use a gluten free rotini pasta, which tastes amazing in this pasta salad. If you aren’t gluten free, then you can use a regular or whole wheat pasta instead. If I am making this for a large party or a crowd, I would use gluten free in case anyone has a gluten intolerance.
- Mayonnaise: I like to use this dairy free mayo to keep this recipe plant-based, but you can use whatever mayo that you would normally use in recipes. If you don’t normally like mayo, try a dairy free version… it’s creamy but still plant based.
- Mustard: I like a prepared organic yellow mustard like this one for my recipes – it’s great to add into dressings and pasta salads, and also delish on top of veggie dogs or burgers.
- Sweet Relish: I ‘m partial to this Chicago-style relish (hey, I stay close to my roots!) and its a great condiment for this recipe and gives a hint of sweetness as well.
- Garlic Powder: to give this pasta salad a bold garlicky flavor, this garlic powder is a great addition to the salad dressing.
- Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the raw onion in the salad.
- Pink Himalayan Sea Salt: I like to use a pink Himalayan Sea Salt in my kitchen, which has more natural minerals than plain processed table salt. It’s fairly inexpensive, so I’d recommend this salt if you’re looking for an easy way to level up your spice pantry.
- Tellicherry Black Pepper: Like the salt, it’s amazing the flavor difference you can get with really good tellicherry black pepper. This pepper is the same price is buying pre-ground, and has a million times more flavor! I use these really great tellicherry peppercorns, which I would definitely recommend.
How Do I Make This Creamy Cucumber Pasta Salad Recipe?
- In a large pot, cook pasta according to package instructions. Drain and set aside to cool.
- In a large bowl, add the rest of the ingredients, and stir well to combine. Add the cooled pasta and toss. Cover and refrigerate for at least 2 hours.
- Before serving, taste for seasoning (the dressing can change and become milder in the fridge), add extra salt or mayonnaise as needed.
- Garnish with fresh parsley and serve.

Creamy Cucumber Pasta Salad
Ingredients
- 1 lb rotini pasta gluten free
- 2 cucumber peeled and chopped
- 1/4 cup Red Onion
- 1 cup fresh parsley
- 2 tablespoons fresh dill chopped
- 1/2 cup mayonnaise dairy free for vegan version
- 1 tablespoon yellow mustard
- 1 tablespoon sweet relish
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1 tablespoon white vinegar
- Himalayan Sea Salt and Pepper to Taste
Instructions
- In a large pot, cook pasta according to package instructions. Drain and set aside to cool.
