This rice pudding is thick and luxurious by using arborio rice, which is traditionally used in Italian risotto. By adding a few pantry staple ingredients together, you can easily have a tasty treat in no time. One of my favorite things about my pressure cooker is how laborious recipes can turn into quick snacks. This no stir rice pudding is made with rich cacao powder, plant based milk, and a few ingredients from your baking cupboard.

Easy Pressure Cooker Rice Pudding Recipe
This vegan chocolate rice pudding is what I call an Easy Weeknight Dessert – which is on your table in under 30 minutes. These quick and simple recipes are perfect for those nights when you want a healthy homecooked treat but don’t want to spend hours in the kitchen. What’s In Vegan Chocolate Rice Pudding?
- Arborio Rice: classic risotto rice. It’s a thick short rice that soaks up a LOT of liquid, making the pudding super creamy without adding any dairy. Make sure you use classic arborio rice for this recipe – jasmine or basmati rice will work but not be as thick and creamy.
- Milk – I used unsweetened Almond Milk for my version of this recipe. I prefer almond milk, which Silk has a shelf-stable version that lasts up to a year in the pantry!
- Raw Cacao Powder: this raw unsweetened cacao powder is a a healthy and good-for-you addition to these brownies. Raw Cacao powder is loaded with antioxidants and has tons of healthy benefits. Make sure you use a raw cacao powder and not sweetened baking cocoa… it makes a huge difference.
- Pink Himalayan Sea Salt: I like to use a pink Himalayan Sea Salt in my kitchen, which has more natural minerals than plain processed table salt. It’s fairly inexpensive, so I’d recommend this salt if you’re looking for an easy way to level up your spice pantry.
- Agave Syrup: I really like using this raw organic agave syrup because it’s a natural and sustainable sweetener, plus it is ridiculously inexpensive online so I always keep a few of these bottles in my pantry.
- Coconut Milk: I use unsweetened full-fat coconut milk, which I’d definitely recommend over lite coconut milk. The flavor makes this dish super rich and creamy without any dairy.
- Vanilla Extract: it’s super important to use real pure vanilla extract, and not artificial baking vanilla flavor. This real all natural vanilla is a fantastic ingredient to give these cookies an #extra boost.

How Do I Make Chocolate Rice Pudding in the Instant Pot/Pressure Cooker?
- In the instant pot, whisk together the almond milk, water, cacao powder, salt, and agave syrup. Add the rice and seal the instant pot lid. Cook on Manual or High Pressure Mode for 7 Minutes. Natural release the pressure for 10 minutes, then after 10 minutes manually release the remaining pressure, taking care to keep your hands and face from the steam vent.
- Carefully remove lid and stir in the coconut milk and vanilla.
- Enjoy warm, or chill in the refrigerator 2 hours before serving.

For all my recipes I use the 8-Quart Instant Pot Ultra, its larger than the standard models (which are only 6 quart) so I have extra room to meal prep and batch cook more meals for the week. The Ultra model also has some great extra settings like cake baking and yogurt making which are really neat. I love that everything can cook in one pot, which makes for way less dishes and hands-off cooking. The Instant Pot is hands-down my favorite kitchen appliance, and actually makes my life so much easier.
