I love using this jam on sandwiches, on toast, or in strawberry jam cookies. It can last in the refrigerator for up to 2 weeks, but it’s so delicious it will go quickly!
It’s strawberry season here in New England – all the you-pick farms are open for business! I love getting fresh strawberries from our local farm stands, or even at the market this time of year. Nothing beats fresh strawberry jam, which is just right when it’s made with less sugar than traditional versions.
If you don’t have fresh strawberries, no problem – frozen berries work perfectly! Most frozen fruit is packed when it’s ripe, so you can enjoy sweet strawberry jam any season.

Make Strawberry Jam with Frozen or Fresh Berries
You can use fresh or frozen strawberries for this recipe. If you have a bag of frozen strawberries in your freezer (or see some on sale) this is a great way to transform them into a bright and simple dish the whole family can enjoy. By using freezer ingredients, I can stock up when they are on sale, and use them in all kinds of great dishes. It saves me a trip to the store, and I can have amazing homemade jam in no time.

What’s In This Less Sugar Strawberry Jam Recipe

- Strawberries – again, you can use fresh or frozen for this jam, they both work great!
- Lemon – fresh is best. The lemon really makes the berry flavor pop and gives a nice acidity in the jam.
- Sugar – I only use a small fraction of the sugar that normal jams have. I did try making this without any sugar, but I found it needed a hint of sweetness. I like using an organic palm sugar for this, or you can use a natural sweetener like honey or maple syrup instead.
- Chia Seeds – a nutritious thickener for fresh jams and jellies – chia seeds are fantastic to add into smoothies or enjoy as a chia seed pudding. These little seeds are super versatile (ever heard of chia pets?) and are wonderful to cook and bake with! They are also a great source of Omega-3 acids, I use this brand which is inexpensive and also organic!
What equipment do I need to make strawberry jam?
Not too much specialty equipment here! This is a fresh refrigerator jam recipe, so it’s not for long-term canning. All you need is a small pot, a fork or potato masher, and some jars for the finished product.
How Do I Make Strawberry Jam with Less Sugar?
- In a small saucepan, add the sliced strawberries and lemon juice. Place the saucepan over low heat, cover the pot with a lid, and gently simmer the strawberries for 10 minutes.
- Mash with a fork, and add the sugar. Stir until sugar dissolves. Continue to simmer the strawberries for 20 more minutes, until they have broken down into jam. Add the chia seeds and stir.
- Place the jam in a mason jar, and allow to cool. Refrigerate and enjoy the jam for up to 2 weeks.
Dietary Modifications for this Jam
- This jam is naturally vegan, vegetarian, and dairy free, and contains no animal products.
- To make this recipe gluten free, ensure that all your ingredients including the sugar and chia seeds are certified gluten free before using.
- For a lower carb version, swap the sugar for a sugar-free sweetener.
- For a naturally sweetened version, use honey or maple syrup instead of the sugar.
