This Tomato Cucumber Mint Salad recipe is a bright & fresh salad, a refreshing summer side dish or appetizer – a great garden recipe to make with homegrown produce. This salad is tossed with a simple red wine vinaigrette for a simple salad that goes quickly!

This fantastic cucumber and tomato salad is ready in 10 minutes, and requires no cooking. It’s a great salad without lettuce, that has tons of flavor from the fresh mint. Enjoy this delicious side with Greek lemon chicken avgolemono soup, a delicious tofu shawarma, or a chickpea pita wrap with hummus.

Summer is here, and so are the cucumber and tomato recipes! We grew 2 beds of tomatoes and tomatillos this year, and have about 10 cucumber plants throughout the garden. We are getting tons of produce every day, and needed this delicious salad to mix it up!

This simple salad features the best of summer: vine ripe tomatoes, fresh mint leaves, and crisp cucumbers. And the red wine vinaigrette is a super easy to toss together, and takes just 3 minutes to prep. Serve this as a starter, with dinner, or bring to a potluck or party for a refreshing twist.

Seasonal Summer Recipes with Tomatoes and Cucumbers

This tomato cucumber mint salad  is a great way to get in some seasonal fresh produce!  Summer time means fresh garden tomatoes, squash, basil, herbs, cucumbers, and bell peppers. Combine your favorite vegetables ingredients into this fresh and delicious summer salad.

And add in some fresh chopped garlic for a little extra freshness and taste of summer. If you don’t have a garden, then pick up the freshest produce you can find at your farmer’s market!

What’s In This Cucumber and Mint Salad with Tomatoes?

  • Tomatoes – I used Roma tomatoes, but you can use any variety you have on hand. If you’re making this in the winter or when tomatoes aren’t in season, I’d recommend using cherry tomatoes, which are usually sweeter.
  • Cucumber – I used English cucumber for this salad.
  • Mint – We grow tons of fresh mint along side our stream.
  • Red Wine Vinegar: I used red wine vinegar for the marinade to give this dish a really nice bright Mediterranean flavor – for that, this red wine vinegar is my go-to!
  • Extra Virgin Olive Oil
  • Sugar – for a little sweetness in the dressing.
  • Oregano: a spice I always put in my salad dressings, marinades, or soups! Dried oregano has a bright and earthy flavor, and goes so well with the vegetables.
  • Garlic Salt: for a little extra flavor than traditional salt.  I like to use this garlic salt in my savory dishes for that extra kick.

How Do I Make This Summer Salad without Lettuce?

  1. In a large bowl, add the chopped tomatoes, cucumber, and mint leaves.
  2. Add the red wine vinegar, olive oil, sugar, oregano, and garlic salt. Toss well to combine.
  3. Refrigerate salad for at least 1 hour. Toss well again before serving.

Grow Fresh Mint on Your Counter All Year Long

Fresh mint is absolutely key in this salad!

We got this great countertop Aerogarden which is fantastic for growing herbs in the winter.  We actually got it when we lived in a smaller apartment, but even now that we own an acreage we still use it year-round! 

I love growing herbs on my countertop like fresh basil, dill, mint, sage, thyme, parsley, and lemon balm – perfect for this cucumber salad. It uses LED lights and water, so no messy soil needed – you can have fresh herbs at your fingertips any time.

I love picking a few springs of parsley to chop on pastas, adding basil leaves to soups, and tossing some dill in with my pasta salads. It also makes a great gift for anyone who would like fresh herbs… no big kitchen or green thumb required!

  • 1/2 cup mint leaves

    Yum! I needed something easy that would use up the last cucumber, the last bit of mint, and some cherry tomatoes. This was a most delicious solution — I made a half batch and it worked out beautifully.
