I love bright & fresh salads all year round, and this awesome vegan apple walnut salad is a treat for any season. The sweet crunchy apples and cabbage pair so well with the herby parsley and soft walnuts. This vegan apple walnut salad is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. How Do I Make This Vegan Apple Walnut Salad?

This salad comes together in 10 minutes, requires no cooking, and couldn’t be easier to assemble!

  1. In a large bowl, add the apple, cabbage, celery, chickpeas, parsley, and walnuts.
  2. To a mason jar, add all the dressing ingredients. Seal with airtight lid and shake well to combine.
  3. Pour the dressing over the salad, and toss well to combine. Enjoy!
