Make This Apple Walnut Salad Vegan for the Perfect Starter
This vegan apple walnut salad is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegan cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right.
By building meals around vegan pantry staples and swapping in a few plant-based ingredients you can make better meals for you and your family. The vinaigrette really makes the salad pop. You can use either maple syrup or agave to sweeten this dressing naturally without using granulated sugar. The tangy dressing is so good with the apples and walnuts, each bite is an absolute treat!
What’s In This Easy Apple Walnut Salad Recipe?

- Apple, Cabbage, Celery, Parsley
- No-Salt-Added Chickpeas: for some plant protein and a great addition to the salad. I only use no-salt-added chickpeas in all my recipes so I can control the amount of salt in the dish. You can get these great no salt chickpeas online here, or make your own from scratch.
- Walnuts
- Olive Oil: I absolutely love this Zoe brand olive oil, which gives a nice fresh flavor to the dressing. Plus it’s a great value for the price, a liter is really inexpensive online here… and it goes great in this salad dressing, for sautéing, or just adding a drizzle to a soup.
- Apple Cider Vinegar: I use Bragg’s Organic apple cider vinegar to give this dressing a bright and fresh flavor! I’d recommend using an organic variety “with the mother.”
- Dijon Mustard: or whole grain
- Maple Syrup or Raw Honey
All the dressing ingredients come right from the pantry, making this dressing a fantastic pantry staple recipe! I’ve been especially relying on pantry staples now that I don’t make so many trips to the grocery store.
How Do I Make This Vegan Apple Salad with Walnuts?
This salad comes together in 10 minutes, requires no cooking, and couldn’t be easier to assemble!
- In a large bowl, add the apple, cabbage, celery, chickpeas, parsley, and walnuts.
- To a mason jar, add all the dressing ingredients. Seal with airtight lid and shake well to combine.
- Pour the dressing over the salad, and toss well to combine. Enjoy!

Vegan Apple Walnut Salad
Ingredients
For the Salad
- 1 apple diced
- 1 cup red cabbage shredded
- 3 stalks celery diced
- 1 14-ounce can No-Salt-Added Chickpeas drained and rinsed
- 1/2 cup spinach
- 1/2 cup chopped walnuts
For the Sweet Dijon Vinaigrette
- 2 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup or agave nectar
Instructions
- In a large bowl, add the apple, cabbage, celery, chickpeas, spinach, and walnuts.
