This vegan apple walnut salad is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegan cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right.

The vinaigrette really makes the salad pop. You can use either maple syrup or agave to sweeten this dressing naturally without using granulated sugar.  The tangy dressing is so good with the apples and walnuts, each bite is an absolute treat!

  • Apple, Cabbage, Celery, Parsley
  • No-Salt-Added Chickpeas: for some plant protein and a great addition to the salad.
  • Walnuts
  • Extra virgin olive oil
  • Apple Cider Vinegar: I use apple cider vinegar to give this dressing a bright and fresh flavor!  I’d recommend using an organic variety “with the mother.”
  • Dijon Mustard: or whole grain
  • Maple Syrup or Raw Honey

How Do I Make This Vegan Apple Salad with Walnuts?

This salad comes together in 10 minutes, requires no cooking, and couldn’t be easier to assemble!

  1. In a large bowl, add the apple, cabbage, celery, chickpeas, parsley, and walnuts.
  2. To a mason jar, add all the dressing ingredients. Seal with airtight lid and shake well to combine.
  3. Pour the dressing over the salad, and toss well to combine. Enjoy!

For the Salad

  • 1 apple diced
  • 1 cup red cabbage shredded
  • 3 stalks celery diced
  • 1 14-ounce can chickpeas drained and rinsed
  • 1/2 cup spinach
  • 1/2 cup chopped walnuts

For the Sweet Dijon Vinaigrette

    This was very good. I added 1/2 brown rice and 1/2 white to bulk it up and doubled the dressing plus added a few more of the other ingredients. Thanks for the recipe.
