Ingredients
For the Salad

apple
diced

cup
red cabbage
shredded
3
stalks celery
diced
1
14-ounce can
chickpeas
drained and rinsed
1/2
cup
spinach
1/2
cup
chopped walnuts
For the Sweet Dijon Vinaigrette

tablespoons
extra virgin olive oil
2
tablespoons
apple cider vinegar
1
tablespoon
Dijon mustard
1
tablespoon
pure maple syrup
or agave nectar
Instructions
In a large bowl, add the apple, cabbage, celery, chickpeas, spinach, and walnuts.
To a mason jar, add all the dressing ingredients. Seal with airtight lid and shake well to combine.
Pour the dressing over the salad, and toss well to combine. Enjoy!
