Summer is in full swing, and we are enjoying all the fresh garden produce we can! This bright and flavorful spinach chickpea salad is the perfect dish welcome in the summer months. Made with garden fresh tomatoes and a 5-minute vinaigrette dressing, this good-for-you chickpea spinach salad is bursting with flavor.
 
This year we grew a few varieties of tomatoes – all of which are booming in the garden right now!  We grew red super snack tomatoes, and yellow golden currant tomatoes which are both producing like crazy! Even if tomatoes aren’t in season, I add cherry tomatoes to salads, which can be sweeter and more flavorful than the larger tomatoes in the winter.

The Perfect Vegetarian Summer Salad Recipe

This spinach chickpea salad couldn’t be easier to make! Just add cooked canned chickpeas, spinach, veggies of your choice, some fresh herbs, and whip up a 5 minute Dijon dressing. And lunch or dinner is served! This is a great salad to bring to a summer block party, it’s a total crowd pleaser. One of my favorite vegetarian side salads, and something everyone at the table will love.  And you can make the dressing ahead of time.  Prepare the dressing the day before the party, cover and refrigerate.

How Do I Make This Spinach Salad with Chickpeas?

  1. In a large bowl, combine washed fresh baby spinach, tomatoes, canned chickpeas, walnuts, and feta cheese.
  2. In a mason jar, add all the dressing ingredients: olive oil, fresh lemon juice, mustard, honey, and garlic. Seal with an air right lid and shake well to combine.
  3. Pour dressing over the salad, and toss well. Taste and adjust seasoning as needed, adding salt and pepper if desired.
