Ingredients You’ll Need
See our recipe card below for the full ingredient amounts and instructions.
The base of this recipe is steel cut oats which are thicker than rolled oats and hold up well in the slow cooker. This recipe works best with steel cut oats, which give an amazing creamy texture as they cook in the slow cooker. Don’t use rolled oats, quick oats, or instant oats for this recipe, only steel cut.
We add a little milk, water, and pure maple syrup into the oats as they cook. The milk and water get absorbed by the oats, and the maple syrup adds a fantastic sweetness in each bite.
We also add cinnamon, unsalted butter, pure vanilla extract, and chopped pecans into our oatmeal.
And the pecan topper makes this oatmeal extra delicious. We make a quick 3-minute cinnamon sugar pecan recipe. We mix whole pecans with some more maple syrup, sugar, and cinnamon, and top the oatmeal with them… yum!
Additions and Substitutions
Super simple to make vegan. Just use a plant-based milk like unsweetened almond milk, a vegan butter, and for the pecan topping, use maple syrup instead of honey.
You don’t need to make the topper. You can just add all of those ingredients into the slow cooker the night before with the oat mixture. I found having the cinnamon sugar pecan topping made the oatmeal excellent, but it’s fine stirred into the oatmeal as well.
Free to add fruit! This recipe is extra good with oven-baked caramel apple slices or a half cup of canned pumpkin for a delicious fall twist.
Step-By-Step Photos and Directions

Step 1: Lightly grease the inner pot of your slow cooker. Add the steel cut oats, milk, water, maple syrup, cinnamon, and butter.

Step 2: Stir well until all ingredients are combined.

Step 3: Cover and cook the oatmeal on LOW for 7 to 8 hours, or HIGH for 3 to 3.5 hours. The oatmeal is done when it absorbs all the liquid and becomes thick and creamy.

Step 4: Remove the lid, and stir in the vanilla extract and chopped pecans.

Step 5: In a small pan, lightly toast the pecans for 2 to 3 minutes over medium-low heat. Stir in the honey, cinnamon, and granulated sugar and stir until coated.

Step 6: Top the oatmeal with the cinnamon sugar pecans, and serve. Drizzle extra maple syrup over the top of the oats if desired.

Expert Tips
- Always test this recipe during the day first before making it overnight! Ovens can vary greatly in their cooking times and temperatures, so be sure to make this during the day so you know exactly how long the oatmeal will take. You don’t want it burning overnight.
- The slow cooker helps prevent the oats from sticking to the side of the pot, so try not to forget this step before you start making the oatmeal.
- Add in fresh seasonal fruit or even stir in some canned pumpkin if desired.
