This slow cooker maple pecan oatmeal recipe is a fantastic and tasty fall breakfast recipe that cooks overnight. Ready when you wake up - rise and shine!
To the inner pot of a slow cooker, add the steel cut oats, milk, water, maple syrup, cinnamon, and butter.
Stir well until all ingredients are combined.
Cover and cook the oatmeal on LOW for 7 to 8 hours, or HIGH for 3 to 3.5 hours. The oatmeal is done when it absorbs all the liquid and becomes thick and creamy.
Remove the lid, and stir in the vanilla extract and chopped pecans.
In a small pan, lightly toast the pecans for 2 to 3 minutes over medium-low heat. Stir in the honey, cinnamon, and granulated sugar and stir until coated.
Top the oatmeal with the cinnamon sugar pecans, and serve. Drizzle extra maple syrup over the top of the oats if desired.
