Eat Hummus for Breakfast!
For this recipe, you can use homemade hummus or just store bought. I love hummus because it’s such a versatile dip and you can add any flavors you’d like! My basic hummus recipe is below, and I have some fantastic recipes for Green Goddess Hummus, Roasted Garlic Hummus, and even a oil free hummus in the instant pot.
What’s In This High Protein Hummus Toast with Eggs?

- Eggs – We live in a super rural area where our neighbors have coolers of eggs for sale at the end of their driveways. If you can buy local eggs, please do!
- Bread: I used a homemade sourdough because that is what we always have on hand. I make a fresh loaf every week, which is great for toasts, garlic bread, or having a slice with soup.
- No Salt Added / Low Sodium Chickpeas: one of my favorite pantry staple ingredients! You can use canned chickpeas (I’d highly recommend a low sodium or no salt version)
- Tahini: A fantastic and flavorful spread made from ground sesame seeds. This tahini is fantastic in any dish, we absolutely love this tahini!
- Cumin: also adds a really nice flavor to this recipe – cumin has a lightly smokey flavor
- Red Chili Pepper Flakes: for a little heat! I like to add a few shakes to this recipe to give this dish a nice complex depth of flavor.
How Do I Make This Mediterranean Hummus Toast Recipe?
- Make the Hummus: if you are making the hummus from scratch you can add the chickpeas, tahini, cumin, pepper flakes, salt, to a food processor. Stream in the cold water until you get the perfect creamy texture. If you are using pre-made hummus, skip this step 🙂
- Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
- To a greased frying pan, crack 2 eggs and cook until almost all of the egg has turned white. Flip the eggs and remove from heat, allowing the eggs to still cook for a bit in the hot pan. Add fried egg to each slice of toast.
- Top with fresh chopped parsley or basil, and an extra sprinkle of chili flakes. Serve as a breakfast or lunch, and enjoy!
