Weekend brunch is one of my favorite meals of the week, and this hash brown breakfast sandwich is the perfect way to treat yo self! This is a fantastic recipe that is super customizable that everyone will love. Plus it has it all: toast, cream cheese, eggs, hash browns, and you favorite toppings together as one.
Now, there’s two ways to execute this sandwich: you can add crispy hash browns TO your sandwich (which I opted to do), or you can use toaster hash brown patties AS the sandwich ‘bread.’ There is no wrong way to eat this baby, it’s only right!

Easy Weekend Brunch Sandwiches!
This hash brown breakfast sandwich is what I call an Easy Weekend Meal – which is on your table in under 30 minutes. These quick and simple recipes are perfect for those days when you want a healthy homecooked breakfast but don’t want to spend hours in the kitchen.

Grow Sprouts Indoors for A Nutritious Crunch All Year Long!
I grow my own sprouts all year long on my kitchen counters… and believe me, it couldn’t be easier! All you need are some sprouting seeds (I like these alfalfa seeds, and these bean sprouts), wide-mouth mason jars, sprouting lids, and some tap water. An endless supply of sprouts will be at your culinary fingertips anytime. I love grabbing a handful of alfalfa sprouts to add to a sandwich or a wrap, or adding a handful of bean sprouts to stir fries or ramen soup. What’s In This Breakfast Sandwich with Hash Browns?
- Hash browns – I absolutely love cooking frozen hash browns on the weekends, it’s such a great breakfast meal to start the day. My go-to method for cooking is usually my Sheet Pan Hash Browns Recipe which makes makes perfectly seasoned and crispy hash browns in about 30 minutes. I put hash browns on my sandwich, but you can always get these awesome toaster hash browns too, and use them as the sandwich bread. Mind. Blown. If so, skip the bread below!
- Brioche: I used brioche bread for my sandwich. Brioche is a rich and sweet French bread made with eggs, milk, and butter. You can buy brioche from a bakery or the store, but I made my own using my seriously easy No Knead Sourdough Brioche recipe. Prep dough the night before, roll it in the morning, let it rise, and bake. Couldn’t be easier, it’s actually one of the simplest breads I make.
- Toppings for the sandwich! Eggs are a classic, but here are some other amazing ideas to top your sandwich with!
- Avocado: I love this fruit, avocados are one of my favorite foods of all time. I used to love getting loads of fresh ripe avocados from my friend’s trees when I lived in California. Now that I’m on the East Coast, my love of avos is still strong, but I get them at Whole Foods instead of freshly picked. If you want to level up your avocado game, my avocado lime salad recipe is a breakfast sandwich favorite!
- Alfalfa Sprouts
- Bacon
- Bell Pepper: If you don’t have fresh peppers, these sweet roasted red peppers are a great substitute! I love adding them to breakfast bakes, sandwiches or wraps, and soups.
- Cream Cheese
- Eggs
- Ham
- Lettuce
- Kalamata Olives: make sure they are pitted! I love the rich briny flavor of these herby kalamata olives, which have a purple hue and a really nice flavor. These Greek olives are fantastic for adding to salads, to dips, or just as a quick snack. I like to use these olive packs, which are great for when you need a handful of olives like in this dish.
- Pineapple Slices: the sweetness of the brioche is the perfect vehicle for this amazing canned sliced pineapple! Top with ham and some slices of bell pepper for a fantastic breakfast sandwich from the tropics.
- Sliced Tomato
- Hummus of choice!

Hash Brown Sandwich
Ingredients
- 4 slices bread use certified gluten free, if needed
- 1.5 cups unseasoned hash browns OR 2 toasted hash brown patties
- 2 eggs or vegan eggs (see below for note!)
- 2 tablespoons cream cheese
- 1 cup alfalfa sprouts
- Other Topping Ideas: Avocado, Tomato, Ham, Bell Pepper, Pineapple, Cheese Slices, Hummus
Instructions
- Toast the slices of brioche until they are golden brown. This recipe will make 2 sandwiches.
- In a pan, cook hash browns according to package directions (I like to bake mine on a sheet pan or fry them in a skillet until golden brown), OR toast 2 pre-made hash brown patties in the toaster. Cook eggs according to your favorite method (scrambling, over easy, poached, etc.)
- On each sandwich, spread 1 piece of brioche bread with 1 tablespoon of cream cheese. Add 1/2 the hash browns (or 1 hash brown patty), fried egg, and alfalfa sprouts on top. Add any other toppings above that you love, and mangia!
