This vegetarian black beans recipe is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegan cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. What’s In This Burrito Black Beans Recipe?

- Black Beans – you can use either dried beans (Instant Pot directions below) or canned beans on the stove top.
- Dried chipotle chilis – I like these chilis for their flavor and hit of spice!
- Diced Tomatoes: I only use no salt added diced tomatoes, these boxed tomatoes are really great to stock up on! I like boxed tomatoes better because they are BPA free and more eco-friendly than aluminum cans. If you haven’t read about the harmful BPA, head over to Nutrition Facts to read more.
- Lime Juice
- Chili Powder: for a really nice flavor in this recipe- the chili powder isn’t spicy but will give you a rich and bright flavor.
- Cumin: also adds a really nice flavor to this recipe – cumin has a lightly smokey flavor found in a lot of soup and chili recipes.
- Adobo Seasoning: a really fantastic blend of salt, pepper, garlic, and spice! I like to get one that doesn’t have a lot of salt it in, so I can control the amount of salt going into the dish.
How Do I Make Chipotle Black Beans?
Stove Top Directions with Canned Beans
- In a large pot, heat the olive oil over medium heat. Add the onion and sauté for 5 minutes until the onion begins to soften.
- Add the dried chopped chipotle peppers and black beans. Stir in the chili powder, paprika, cumin, oregano, and vegetable stock. Mix well to combine. Add the bay leaves and salt, cover, and bring to a boil. Once boiling, cover and reduce to a simmer.
- Cook for 25 minutes, remove the bay leaves, and squeeze in fresh lime juice.
- Add to tacos, burrito bowls, or just enjoy by themselves.
Instant Pot Directions with Dried Beans
- In the Instant Pot, heat the olive oil over medium heat and set to Sauté mode. Add the onion and cook for 5 minutes until the onion begins to soften.
- Add the dried chopped chipotle peppers and black beans. Stir in the chili powder, paprika, cumin, oregano, and vegetable stock. Mix well to combine. Add the bay leaves and salt, and seal the Instant Pot lid. Set to Pressure Cook (or Manual/High mode, depending on your model), and cook for 40 minutes.
- Once 40 minutes has passed, allow the beans to naturally release for 15 more minutes. Then carefully quickly release the remainder of the steam. Remove lid, discard the bay leaves, and squeeze in fresh lime juice.
- Add to tacos, burrito bowls, or just enjoy by themselves.

Ingredients
Stove Top Recipe with Canned Beans
- 2 14-ounce cans black beans cooked, low sodium if possible
- 1 tablespoon olive oil
- 1 onion chopped
- 2 tablespoons dried chipotle peppers chopped
- 1 teaspoon each paprika, chili powder, cumin, oregano
- 1/2 teaspoon Himalayan sea salt
- 1/2 cup vegetable stock
- 2 bay leaves
- Juice of 1 lime about 1-2 tablespoons
Instant Pot Recipe with Dried Beans
- 1 lb dried black beans no soaking required
- 1 tablespoon olive oil
- 1 sweet onion finely diced
- 1 teaspoon each paprika, chili powder, cumin, oregano
- 1/4 cup dried chipotle peppers chopped
- 1/2 teaspoon Himalayan sea salt
- 5 cups vegetable stock
- 2 bay leaves
- Juice of 2 limes about 3-4 tablespoons
