I love cooking a big batch of beets at once, my pressure cooker can hold about 2 lbs at once. I used cooked beets in my beet feta & walnut salad, easy pickled beets, or my beet tartine – the possibilities are endless!
I love this simple and easy Instant Pot beets recipe, it’s my absolute favorite way to cook fresh beets. All you have to do is slice off the ends, place the whole beets (with the skin on) in your Instant Pot, cook, and peel after.
We love eating beets, they are fantastic side dishes with any protein. They have a beautiful deep red color and sweet earthy flavor. They turn out perfect every time, and can be used in so many amazing recipes.

Make Beets In Your Instant Pot
You can use any electric pressure cooker for these easy beets.
Of all my kitchen appliances, and I mean ALL of them, my Instant Pot pressure cooker is my most-used! I cook everything in it from beans and legumes, to soups and pasta dishes.
You can get Instant Pots in many sizes, but I like my 8-quart model, which is ideal for batch cooking and meal prep. It also has a quicker pressure-release feature which saves me even more cooking time.
I love that everything can cook in one pot, which makes for way less dishes and hands-off cooking. The Instant Pot is hands-down my favorite kitchen appliance, and actually makes my life so much easier.
What’s In These Pressure Cooker Beets?

- Beets – Whole, uncooked beets. You can use any variety – I used basic red beets.
- Instant Pot – I love my pressure cooker, it gets almost daily use from me! If you have another brand of pressure cooker (manual or electric) you can use it as well.
- Instant Pot Trivet – make sure you have the trivet, which will elevate the beets from cooking in the water.
How To Cook Beets in the Instant Pot
- Wash the beets, and slice off the root and stem portion of the beet so it’s just the root. Keep the peels on.
- Place the trivet in the inner pot of the Instant Pot, and place the beets on top. Pour the water to the bottom of the pot, and seal the lid. Pressure cook according to the size of the beets: Small beets = 25 minutes, Medium Beets = 32 minutes, Large Beets = 40 minutes.
- Once the beets have finished cooked, manually release the pressure.
- Rinse the beets under cold water, and peel the skin using gloves.
- Enjoy peeled beets by themselves, or use in any recipe that calls for cooked beets.

- 2 lbs beets about 6-7 medium beets
- 2 cups water
Instructions
- Wash the beets, and slice off the root and stem portion of the beet so it’s just the root. Keep the peels on.
