What’s In This Beet and Walnut Salad Recipe?
- Sliced Beets – you can either use canned beets, packaged cooked beets, or stem them yourself! I used canned for this recipe.
- Really Good Extra Virgin Olive Oil: I like to use this fruity olive oil which has a fantastic flavor and deep color- it’s inexpensive & I like to keep a few liters stocked up in my pantry. For the quality of oil you get, it’s an excellent value.
- Orange, juiced
- Apple Cider Vinegar: which gives this dressing a little extra tang! There are great benefits to apple cider vinegar with the mother aside from it’s fantastic flavor. I think it gives a nice extra sweetness and depth.
- Dijon Mustard – for a really nice flavor and texture, this dijon is a favorite in our pantry. Use a good quality mustard, not yellow prepared mustard.
- Sugar
- Salt & Pepper
- Walnuts: because I love adding heart-healthy and brain-healthy ingredients to my foods when I can. I stocked up a few bags of these walnuts which are super cheap and a great value for the quality.
- Feta Cheese – I used a crumbled feta for this recipe, but you can also use a block of feta cheese, mashed with a form before adding to the pan.
- Basil
How Do I Make This Beet Salad with Feta Cheese
- Drain sliced cooked beets, set aside.
- In a medium bowl, add the dressing ingredients: olive oil, orange juice, apple cider vinegar, Dijon mustard, sugar, salt, and pepper. Mix well to combine. Place beets in the bowl, and allow the beets to marinate in the dressing for at least 1 hour (or overnight, if you want to prep this ahead of time)
- Once marinated, drain the beets, and place them on a serving plate. Top with walnuts, feta cheese, and julienned basil. Drizzle additional extra virgin olive oil over the beets if desired.
A Great Make Ahead Beet Salad for Entertaining
This beet feta walnut salad recipe is fantastic to make ahead of time for a party, potluck, or gathering. Making this recipe in advance allows you to skip major cooking or prep on the day-of. Marinate the beets the night before, then assemble the rest of the salad in 5 minutes before serving!
This is a great recipe to entertain with, or bring to an event. A crowd-pleaser that everyone is sure to love! Check out my other make ahead meals too.
