One Pot Rice Recipes For the Win!
This vegan yellow rice recipe is the perfect one-pot lunch or dinner! I love a good One Pot Meal, especially during these summer months when I don’t want a lot of burners going at once. Cooking everything in one pot is one of my favorite ways to get a meal on the table fast! And one pot makes cleaning up a breeze. The rice cooker does all the work for you, so you can focus on other kitchen prep while the food cooks.

What’s In This Rice Cooker Yellow Rice?

- Basmati Rice: I really love using basmati rice in most of my dishes. Basmati rice is a very long-grain rice, and has a really nice texture in this cooked rice dish.
- Corn: you can use fresh, canned, or frozen (I used frozen and it turned out amazing)
- Peas: I used frozen also
- Bell Pepper: fresh or frozen works just fine!
- Chili Powder: for a really nice flavor in this dip – the chili powder isn’t spicy but will give you a rich and bright flavor.
- Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the raw onion in the salad.
- Turmeric – a staple in our spice cabinet! I try to add a teaspoon of turmeric into soups, stews, and my rice dishes too.
- Pink Himalayan Sea Salt: I like to use a pink Himalayan Sea Salt in my kitchen, which has more natural minerals than plain processed table salt. It’s fairly inexpensive, so I’d recommend this salt if you’re looking for an easy way to level up your spice pantry.
- Adobo Seasoning: a really fantastic blend of salt, pepper, garlic, and spice! I like to get one that doesn’t have a lot of salt it in, so I can control the amount of salt going into the dish.
Frozen Veggie Recipes For the Win!
I used a few frozen veggies for this recipe instead of fresh produce. Frozen produce is a great option for finding fresh and flavorful vegetables in the off season. By using freezer ingredients, I can stock up when they are on sale, and use them in all kinds of great dishes. It saves me a trip to the store, and I can add amazing veggies right into the recipe.
Frozen vegetables are often picked at peak ripeness, so they are a much better option than canned. How Do I Make Yellow Rice in the Rice Cooker?
- Add all ingredients to a rice cooker, and stir well to combine.
- Set cook time for normal mode or 35 minutes for manual mode.
- Once rice has finished cooking, fluff with a fork and serve.
What’s The Best Rice Cooker for Yellow Rice?
We have this fantastic rice cooker that has lasted us years and years, so I have to say I’ve been very happy with it! It gets weekly use, and is great for cooking rice, lentils, and quinoa in the rice cooker. But I’d love to upgrade to this model eventually, it’s THE Cadillac of rice cookers. Our family has it, and it is one fantastic rice cooker. And it has a great feature which keeps the rice warm on the counter, so you can enjoy it all day.

Ingredients
- 1 tablespoon vegetable oil
- 2 cups basmati rice
- 1/2 cup sweet corn
- 1/2 cup peas
- 1/2 cup bell pepper
- 1 teaspoon chili powder
- 1 teaspoon onion powder
- 1 teaspoon turmeric
- 1/2 teaspoon Himalayan sea salt
- 2 cups water
- Adobo spice to taste
