You can load these quinoa tacos up with your favorite toppings: lettuce, tomato, jalapeno peppers, red onions, & avocado! I love serving these with a side of Instant Pot spicy black beans and my favorite rice cooker yellow rice for a complete meal!
We love a good plant-based taco, especially one loaded with ALL the toppings! These quinoa tacos are easy to make, and the vegetarian taco filling has a similar texture to ground beef. I cook the quinoa, then mix it with spices and bake it to make it crunchy and delicious.
Quinoa makes a great taco filling, because it’s high in protein and fiber. I always cook my quinoa in the rice cooker first, then mix in my favorite taco spice. Load it in your favorite shells – whether you’re team hard or soft shells – and enjoy!

This quinoa tacos recipe is a fantastic pantry-staple meal! It uses many staple ingredients kept in a dry pantry or cupboards, like quinoa and taco spices. Keeping a well-stocked pantry makes it easy to come up with delicious and healthy meals using a few staples you can rotate.

What’s In Quinoa Taco Filling?

- Red quinoa: I love red quinoa, so I always have plenty stocked in the pantry! I used this fantastic red quinoa, but you can use white or multicolored. You can cook quinoa on the stove top, in the Instant Pot (my preferred method), in the rice cooker. This red quinoa is a fantastic addition to salads, soups, or wraps… a healthy plant-based protein you can feel good about eating.
- Taco Spice Mix – you can use your favorite
- Taco shells – hard shells or soft shells, which ever you prefer!
- Your favorite taco toppings: I used lettuce, tomato, red onion, jalapeno peppers, and a plant based sour cream.
How Do You Make Tacos With Quinoa Filling?
- Cook your quinoa. Cook quinoa on the stove top – add the quinoa to a pot with the water and salt. Bring to a boil, then reduce heat to a simmer and cover the pot with a lid. Allow the quinoa to cook for 15-20 minutes. Fluff with fork when done. Alternatively, you can cook the quinoa in a rice cooker, by following my recipe here.
- Once quinoa is cooked, mix in the taco seasoning. Stir well to combine.
- Warm or char your tortillas, add a scoop of the quinoa taco filling, and load on with your favorite toppings. Enjoy!
Dietary Modifications & Substitutions
You can make these tacos with any color quinoa. I like red quinoa because it has a similar color to ground beef, and I find it’s a bit more firm than white quinoa. You can also use any taco seasoning you prefer.
- To make these tacos vegan – ensure all the ingredients you are using are plant-based and not made with animal products. These should be vegan, but be sure that your taco seasoning or tortillas don’t have added animal stocks or broths.
- To make gluten free, ensure you are using a certified gluten free tortilla and taco spice mix.
