- Tomatoes, Basil, & Fresh Spinach
- Fresh mozzarella balls – I used this Ciliegine which means “cherry sized” in Italian.
- Good Extra Virgin Olive Oil: I like to use this fruity olive oil which has a fantastic flavor and deep color.
- Aged Balsamic Vinegar: I use this aged balsamic vinegar glaze because it has a really great flavor and a thick consistency perfect for drizzling on this garlic bread recipe!
- Tellicherry Peppercorns: It’s amazing the flavor difference you can get with really good tellicherry black pepper.
A No-Cook Caprese Recipe That’s Perfect for Summer
This no-cook spinach caprese salad is a quick and simple recipe. I love a good no-cook recipe for those days when I’m not feeling like standing around the stove, or for summer nights when it’s too hot to cook. This salad comes together in about 5 minutes, and doesn’t require the stove or microwave to make. Just use a few staple ingredients and you have a tasty meal ready in no time. And very little to clean up afterwards… an added bonus!
How Do I Make This Spinach Caprese Salad?
- On a plate or in a bowl, add the fresh spinach, and mozzarella balls.
- Slice tomatoes, and arrange them around the mozzarella. I used a mix of cherry tomatoes for color – but pick the sweetest and most in-season tomatoes you can find (usually cherry tomatoes are my go-to off season).
- Top with the fresh shredded basil. Drizzle the olive oil and balsamic vinegar over the salad and crack fresh black pepper over the salad.
- Serve immediately, and enjoy!

Ingredients
- 5 ounces fresh baby spinach
- 4 ounces fresh mozzarella cheese
- 2 cups cherry tomatoes halved
- 1/2 cup fresh basil cut into ribbons
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- 1/4 teaspoon tellicherry black pepper
