This simple cucumber mayo salad recipe is a great way to use extra cucumbers from the garden or farmers market. A light and refreshing salad that is great any time of year, but especially on hot summer days.

Our garden cucumbers are always super productive all summer long – thanks to my husbands green thumb and our bees (love my pollinators)!  This cucumber salad is a fantastic way to use up those garden cucumbers, and can be made with vegan mayo – see video below for the brand I use.

This creamy cucumber salad with mayo has been made time & time again in our household. I make it for summer cookouts when friends are over, or just as a weeknight recipe when I have extra cucumbers. The combination of the mayo, dill, cucumber, and onion is classic. It’s a great salad to serve with heavier fare.

No matter what time of year, this tasty fresh cucumber salad makes a refreshing side dish. It’s great to serve when cucumbers are in season in summer, or equally great using store-bought cucumbers during the off season months.

What’s In This Creamy Cucumber Salad with Vinegar?

  • Crisp Cucumbers – I used thin slices of English cucumbers for this delicious recipe. You can also use regular cucumbers, or smaller Persian cucumbers or Kirby cucumbers.  I sliced them by hand, but you could use a mandoline slicer as well.
  • Red Onions – I love the color contrast of red sweet onions, but you can use yellow onions or white onions instead.
  • Fresh Dill – I find works better than dried dill for this salad.
  • Mayonnaise – while classic cucumber salad dressings are made with sour cream, I wanted to make a version with mayo for a little extra tang and flavor. Use regular mayo or Miracle Whip too. 
  • Sea salt & Black Pepper
  • Rice vinegar: I love this sweet & tangy rice vinegar, I always keep this seasoned vinegar stocked in my pantry for dressings and salads. You can substitute white wine vinegar or lemon juice as well.
  • Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the raw onion in the salad.
  • Granulated Sugar: I like this organic sugar for my recipes, I’d recommend Anthony’s organic sugar for cooking and baking.

A Make Ahead Cucumber Mayo Salad for Entertaining

This fresh cucumbers with mayonnaise recipe is fantastic to make ahead of time for a party, potluck, or gathering. Making the salad or the creamy dressing in advance allows you to skip any cooking or prep on the day-of. This creamy cucumber salad recipe is a great side to entertain with, or bring to an event. 

Chilling the cucumber onion salad overnight in the fridge actually makes it taste better the next day. A perfect summer side dish that everyone is sure to love!

How Do I Make Cucumber Salad with Mayo?

  1. Pell (if desired) your cucumbers, and cut them into thin slices.
  2. Add the sliced cucumbers and all ingredients to a large bowl, and mix well to combine. 
  3. Taste and adjust seasoning, adding more salt or pepper as desired.
  4. Refrigerate for 1 hour before serving. Store leftovers in an airtight container for up to 3 days.

Ingredients
  

  • 3 cucumbers sliced
  • 1/2 red onion thinly sliced
  • 1/2 cup mayo use vegan if desired
  • 1/4 cup fresh dill chopped
  • 2 tablespoons rice vinegar
  • 1 tablespoon sugar
  • 1/4 teaspoon Sea Salt
  • 1/4 teaspoon Black Pepper

Instructions
 

  • Add all ingredients to a large bowl, and mix well to combine.
  • Taste and adjust seasoning, adding more salt or pepper as desired.
