We love a good #TacoTuesday around here (I mean, could there ever be a bad #TacoTuesday)?  It’s a fun way to meal plan and add some spice to our menus during the week.  I love going all out on homemade guac, queso dip, homemade vegan taco filling, rainbow fajitas, and more!  Plus a pitcher of margaritas.  Always margaritas.

Here are a few of my favorite recipes for vegan Taco Tuesday.  They are full of flavor, super versatile , and all use fresh plant-based ingredients.  From appetizers to desserts, here are our favorite vegan Taco Tuesday finds.

Creamy Vegan Queso (Dairy Free, Whole30, Paleo, Gluten Free)

This Creamy Vegan Queso (dairy free) is dynamite for those late-night queso cravings! This healthy amazing plant-based queso has cashews, jalapeño, lime, and cilantro.  This flavorful dip is blended and ready for your tortilla chips in no time!

Fresh Mango Margarita (Refreshing Summer Cocktail)

This Fresh Mango Margarita is a sweet, tangy, and refreshing way to kick off happy hour! Blend for a frozen cocktail anytime! Summer and frozen margaritas go hand in hand for me!  I love the sweet & citrus-y combination of the classic margarita, blended with ice and poured into a tall glass.  Get a full serving of fruit in, too!  See?  Its healthy.

We love love LOVE Textured Vegetable Protein on our homestead – and tacos are the perfect vehicle for it.  We make these tacos a TON – pretty much every week 🙂


Spicy Black Beans in the Instant Pot (Vegan, Gluten Free, Dairy Free)

These Perfectly Spicy Black Beans in the Instant Pot are ready in under an hour, even using no soak dried beans! With chilis, peppers, onion, and spices these beans are perfect to meal prep, make ahead, or batch cook. These black beans are a perfect pantry staple dinner, and a great way to use those extra dried beans you have in your cupboard.  Even if you don’t have an Instant Pot, you can easily make this dish on the stove top.  Use canned black beans for a quick fix.

Make quick & yummy Vegan Fajitas for an easy sheet pan dinner!  Roasted peppers, onions, sweet potato, zucchini, and mushrooms are ready in 30 minutes, can be made ahead. Happy Cinco De Mayo!  We regularly #TacoTuesday on our homestead, but I thought I would switch it up and create some healthy veggie fajitas instead.  I love sheet pan meals, too.  Throw everything in a pan, throw that pan in the oven, and throw that food on your plate when its done.  One pan dinners are great for easy clean up.


The BEST Taco Tuesday Guacamole (Vegan, Paleo, Whole30, Gluten Free)

Guac is extra, and so am I!  Nothing jazzes it up like out favorite Taco Tuesday Guacamole.  No seriously, we do tacos every single week – the vegan TVP recipe for Our Weekly Vegan Taco Night is above! I love grabbing super fresh and ripe avocados from the store, and making a quick guac in about 10 minutes.  This simple guac features fresh avocados, cilantro, lime juice, tomatoes, onions, and a hint of lime.  Perfect to dip chips into, or to top your enchiladas or burritos with.


Vegan Instant Pot Mexican Rice

This Instant Pot Mexican Rice is the perfect one-pot side dish to make in your Instant Pot or electric pressure cooker. A fantastic side dish to serve with your tacos, black beans, enchiladas, or guac. You could also use the stove top or a rice cooker to prepare the rice, and spice it after cooking. Great for bean and rice burritos, one of my faves!

This Vegan Taco Salad from Running On Real Food is a delish way to get some extra veggies into your Taco Tuesday!   Loaded with lettuce, fresh tomatoes, corn, black beans, this is the perfect way to kick off the week and also eat right.  I love that this salad is served with homemade tortilla chips too.  The perfect Taco Tuesday dinner to get your 5 servings of veggies in!

Gluten Free & Vegan Churros
