This easy Peach Baked Oatmeal is made with ripe fresh fruit, warm spices, nuts, and rolled oats! Make this easy vegan & dairy free breakfast for a tasty way to rise & shine.
 
We love cooking with oats on our homestead: overnight oats are a particular favorite, but I have been getting super into baked oatmeal lately.  Baked oats with peaches are simple to make and perfect to enjoy for breakfast any day!

Rise & shine with this delicious, hearty, baked oatmeal!  A seriously yummy way to start the day.  There’s nothing better than fresh fruit, warm oats, and fragrant cinnamon and spices baking in the oven.

This peach baked oatmeal is a dish the whole family will LOVE!  Its super kid-friendly (and super adult-friendly) and is a great sweet-but-not-too-sweet way to start the day.  I made mine with brown sugar but if you wanted to sub in a natural sweetener like maple syrup or honey that works too!

What’s In This Baked Oatmeal with Peaches?

  • Old Fashioned Oats: I used old fashioned oats for this recipe. I found old fashioned oats work much better than quick oats, as they hold up really well
  • Almond Milk: or any plant-based milk of your choice!
  • Peaches – you can use fresh or frozen (just run under warm water before adding).
  • Cinnamon: which gives this dish a subtle spice-y touch!  I love to add in a pinch for extra warmth and depth of flavor.
  • Ground Flaxseeds: I always add a scoop in my oatmeal for a little extra flavor.
  • Brown Sugar: or any natural sweetener of your choice! Maple Syrup or honey are also delicious choices.
  • Vanilla Extract: it’s super important to use real pure vanilla extract, and not artificial baking vanilla flavor. This real all natural vanilla is a fantastic ingredient to give this recipe an #extra boost.

Inexpensive Oat Recipes for Breakfast

All simple ingredients, most of which you have in your pantry!  This is an awesome pantry staple recipe- you can even used canned peaches if you wanted.  I love a good fresh peach (especially in the summer time) but canned or frozen peaches work just as well.

I love the warm flavors and spices in this oatmeal, and its made to load on toppings!  You can top with extra fresh peaches or fresh berries.  Also a drizzle of maple syrup or honey would be divine.  Since we are homesteaders, we do make our own maple syrup from tapping our trees in the spring.  And as beekeepers we always have tons of extra honey lying around.  I guess we have the natural sweetener market covered around here!

How Do I Make Baked Oatmeal with Peaches?

  1. Preheat the oven to 375 degrees Fahrenheit, grease a 8×8 inch baking dish.
  2. In a large bowl, add all ingredients together and stir well to combine.
  3. Pour oatmeal into the baking dish and too with sliced apples.
  4. Bake for 45 minutes, and enjoy!

Make Ahead Option to Mix the Night Before 

If Making the Night Before: Do Steps 2 & 3, then cover the baking dish with foil and refrigerate overnight.  In the morning, heat the oven to 375 degrees and bake for 45 minutes!

This oatmeal is great to make ahead the night before, and then bake in the morning.  I’m all for anything that makes my mornings go a little more smoothly and easily around here.

This is also fantastic to meal prep!  I normally make this on a Sunday morning, bake, and portion out in individual containers for the week.  That way, we can grab one, heat it, and have an easy breakfast that requires little cooking and no prep!

Dietary Modifications

While this oatmeal is gluten-free, dairy free, and vegan, just make sure to double check that the oats are certified gluten free and any ingredients are also certified gluten free.

This would be great with a scoop of yogurt on top too – use dairy-free coconut or soy yogurt if you are vegan, or a unsweetened Greek yogurt if you eat dairy.

If you are staying away from refined sweeteners, you can simply substitute the brown sugar for maple syrup or raw local honey.  As a beekeeper, I totally approve!

Ingredients
