I’m a relative newbie to the magic of overnight oats.  I’ve been trying out different flavor and spice combinations, and this peach cobbler version turned out incredible!  Plus my husband loves oatmeal, so overnight oats are an easy way for me to make a batch cook a week of breakfasts that he will love.

I love meal prepping, I have a whole list of recipes that are easy to Meal Prep & Make Ahead of time.  These oats are the perfect solution to batch cooking a healthy and tasty breakfast.  The recipe below makes a lot of oatmeal (about 8 cups), which fits perfectly in 4 pint sized mason jars.  A perfect an easy meal-on-the-go to bring to school or the office.

I like using a combination of fresh and cooked peaches in this recipe.  The warm cooked peaches and spices are super flavorful, and I also like to mix in fresh peaches in the oatmeal too.  Its nice to get a bright fresh raw peach in each bite!

How Do I Make Peach Cobbler Overnight Oats?

  1. Chop the peaches into small bite-sized pieces… about 1/2 inch
  2. In a saucepan, melt the coconut oil on low heat.  Add about 3/4 of the peaches, a half teaspoon of the cinnamon, the brown sugar, and a pinch of salt.  Sauté for about 7 or 8 minutes until the peaches begin to soften.  Add a splash of almond milk to the pan if more liquid is needed. Turn off heat, and set aside.
  3. In a large bowl, add the oats, the remainder of the chopped peaches, the last 1/2 teaspoon of cinnamon, almonds, walnuts, almond milk, and yogurt.  Stir well to combine.
  4. To assemble the oats: take 4 pint sized Mason jars.  Fill the bottom third with the oat mixture.  Fill the middle third with the sautéed peaches in butter.  And fill the top third with the oats again.  Repeat for each jar!
  5. Seal jars, and refrigerate.  Oats will last up to 4 days in the fridge.

For serving, I would definitely recommend pint-sized mason jars. Aside from being adorable, they are leak proof and perfect for taking to work or school.

Dietary Modifications:

  • Make sure the oats are Gluten free! It’ll say on the label.
  • If you are not vegan or dairy-free, feel free to use a regular dairy vanilla yogurt. I would recommend a Greek yogurt for extra morning protein.

    • 2.5 cups Gluten Free oats
    • 1/2 cup sliced almonds
    • 1/2 cup crushed walnuts
    • 1.5 plain unsweetened almond milk
    • 1 cup vanilla yogurt use dairy-free for vegan option

    Instructions
