Whats In This Apple Berry Baked Oatmeal?
- Apples
- Blueberries, or any berry of choice
- Rolled Oats, gluten free
- Almond Milk, or any milk you have on hand
- Vanilla Extract
- Butter, there are tons of great dairy free / vegan versions available
- Flour: Use a 1:1 gluten free mix or almond flour (or regular flour if you aren’t gluten free)
- Brown Sugar
- Cinnamon
- Pinch of Salt
The ingredient list is simple and consise. I used fresh apples and frozen blueberries for this, but you can use any fresh or frozen fruit combination you have on hand.
This baked oatmeal is made for a cool spring or autumn day. It’s warm, hearty, filling, and packed with fresh fruits (hello fall apple picking!) and healthy filling oats.
How Do I Make This Vegan Baked Oatmeal?

Preheat the oven to 375 degrees, and grease a 13×9 baking dish.

Mix the oatmeal: in a large bowl, combine 1 of the chopped apples, 3 cups of rolled oats, cinnamon, the almond milk, 1/4 cup of brown sugar, and the vanilla extract. Stir well and add to the greased baking dish.

Make the filling: in a saucepan, heat a small pad of the butter until melted, and sautee 2 of the apples with the blueberries and pour on top of the oatmeal in the baking dish.

Add the crumble: in a small bowl, combine the remaining 1/2 cup of rolled oats, 1/4 flour, 1/2 sticks butter, pinch of salt, and 1/2 cup brown sugar. Mix well and top the apple blue berry mixture with the crumble.
- Bake the oatmeal for 45 minutes until the top begins to turn golden brown. Carefully remove from oven and drizzle with maple syrup, raw honey, or a splash of almond milk.
This recipe is super simple to make ahead or meal prep for the week! I have been baking a big dish of this on Monday mornings to enjoy throughout the whole week. You can even meal prep it Sunday night, cover and refrigerate, and then bake it Monday morning.
