This savory ricotta and kale toast recipe is the perfect breakfast when you want something totally decadent but also want it in 5 minutes. This beautiful toast takes advantage of leftover vegetables, and is loaded on creamy and sweet ricotta. Drizzle some honey on top, add a sprinkle of sea salt, and breakfast is served.
We grew kale indoors and outdoors this year, and have had a steady supply of it all year. I love adding kale to smoothies, soups, and stews – BUT there is nothing like hearty garlicky kale sauteed with a little olive oil. Top it on a toast slathered with ricotta cheese and you have one healthy breakfast.

Gluten free cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. How Do I Make Kale Ricotta Toast with Garlic?

  1. Sauté the kale: in a small pan, add the olive oil and chopped garlic, sauté over low heat for 4 to 5 minutes. Add kale, and cook for an additional 2 minutes until kale has wilted and is a deep green color.
  2. Toast the bread under the broiler for 3 minutes per side, or in a toaster. Spread each toast piece with ricotta in a thick layer.
  3. Add the sautéed kale and crushed chili flakes.
  4. Add an optional sprinkle of sea salt, and enjoy!

Ingredients
  

  • 1 tablespoon olive oil
  • 2 cloves garlic minced
  • 2 cups fresh kale stems removed
  • 2 slices bread use gluten free
  • 1/2 cup ricotta see Notes below for a vegan ricotta
  • 1/4 teaspoon red pepper flakes
  • Sprinkle Himalayan sea salt

Instructions
 

  • Sauté the kale: in a small pan, add the olive oil and chopped garlic, sauté over low heat for 4 to 5 minutes. Add kale, and cook for an additional 2 minutes until kale has wilted and is a deep green color.

Notes

Vegan Ricotta Recipe
  • 1 12-ounce block silken tofu
  • 1 clove garlic
  • 2 tablespoons nutritional yeast
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon Italian seasonings
  • Pinch of Salt 
Add all ingredients to a blender or food processor, and combine until smooth.
