- Butter – I like to use unsalted butter to reduce the amount of sodium in my cooking.
- Parsley – fresh, don’t use the dried herb.
- Potatoes – I used a yellow fingerling, but you can use any red or yellow variety – just not Russet potatoes, as they can fall apart while boiling, then baking.
- Garlic – for extra flavor

How Do I Make Roasted Butter Potatoes with Herbs?
- Chop potatoes into bite-sized pieces. Place in a large pot, and add just enough vegetable stock to cover the potatoes. Bring to a boil, and cook for 10-15 minutes until the potatoes are tender enough to be pierced with a fork. Drain, and set potatoes aside.
- Preheat the oven to 425 degrees Fahrenheit. In a mixing bowl, add the melted garlic, butter, salt, and pepper. Mix well to combine, then toss the cooked potatoes.
- Place the potatoes on a sheet pan, and bake for 15 minutes until they begin to crisp.
- Remove from oven, toss with chopped parsley, and serve immediately. Enjoy!

Butter Parsley Potatoes
Ingredients
- 2 lb fingerling potatoes or other yellow or red potato
- 4 to 6 cups Low Sodium Vegetable Stock
- 4 tablespoons melted butter
- 4 cloves garlic minced
- 1/2 teaspoon Himalayan sea salt
- 1/2 teaspoon freshly ground Tellicherry Black Pepper
- 1 bunch parsley finely chopped
