These Butter Parsley Potatoes are a fantastic & flavorful side dish - vegetarian, and FULL of flavor! These potatoes are fantastic served alongside a beef bourguignon, a huge side salad, and garlic carrots.
2lbfingerling potatoesor other yellow or red potato
4 to 6cupsLow Sodium Vegetable Stock
4tablespoonsmelted butter
4clovesgarlicminced
1/2teaspoonSea Salt
1/2teaspoonBlack Pepper
1bunchparsleyfinely chopped
Instructions
Chop potatoes into bite-sized pieces. Place in a medium pot, and add just enough vegetable stock to cover the potatoes. Bring to a boil, and cook for 10-15 minutes until the potatoes are tender enough to be pierced with a fork. Drain, and set potatoes aside.
Preheat the oven to 425 degrees Fahrenheit. In a mixing bowl, add the melted garlic, butter, salt, and pepper. Mix well to combine, then toss the cooked potatoes.
Place the potatoes on a sheet pan, and bake for 15 minutes until they begin to crisp.
Remove from oven, toss with fresh chopped parsley, and serve immediately. Enjoy!
