Butter Parsley Potatoes

These Butter Parsley Potatoes are a fantastic & flavorful side dish - vegetarian, and FULL of flavor! You can make these potatoes with almost any variety - they are a great year-round side that the whole family will love. Bright fresh herbs, starchy potatoes, and a delicious buttery sauce. These potatoes are fantastic served alongside a beef bourguignon, a huge side salad, and garlic carrots.

Ingredients
  

  • 2 lb fingerling potatoes or other yellow or red potato
  • 4 to 6 cups Low Sodium Vegetable Stock
  • 4 tablespoons melted butter
  • 4 cloves garlic minced
  • 1/2 teaspoon Sea Salt
  • 1/2 teaspoon Black Pepper
  • 1 bunch parsley finely chopped

Instructions
 

  • Chop potatoes into bite-sized pieces.  Place in a medium pot, and add just enough vegetable stock to cover the potatoes.  Bring to a boil, and cook for 10-15 minutes until the potatoes are tender enough to be pierced with a fork. Drain, and set potatoes aside.
  • Preheat the oven to 425 degrees Fahrenheit.  In a mixing bowl, add the melted garlic, butter, salt, and pepper.  Mix well to combine, then toss the cooked potatoes.
  • Place the potatoes on a sheet pan, and bake for 15 minutes until they begin to crisp.
  • Remove from oven, toss with fresh chopped parsley, and serve immediately. Enjoy!
