Our garden cucumbers are always super productive all summer long – thanks to my husbands green thumb and our bees (love my pollinators)!  This cucumber salad is a fantastic way to use up those garden cucumbers, with the best mayonnaise dressing.

This creamy cucumber salad with mayo has been made time & time again in our household. I make it for summer cookouts when friends are over, or just as a weeknight recipe when I have extra cucumbers. The combination of the mayo, dill, cucumber, and onion is classic. It’s a great lighter side salad to serve with any meal.

  • Crisp Cucumbers – I used thin slices of homegrown cucumbers for this delicious recipe. You can also use English cucumbers, or smaller Persian cucumbers or Kirby cucumbers.  I sliced them by hand, but you could use a mandoline slicer as well.
  • Red Onions – I love the color contrast of red sweet onions, but you can use yellow onions or white onions instead.
  • Fresh Dill – I find works better than dried dill for this salad.
  • Mayonnaise – while classic cucumber salad dressings are made with sour cream, I wanted to make a version with mayo for a little extra tang and flavor.
  • Sea salt & Black Pepper
  • Rice vinegar: I love this sweet & tangy rice vinegar, I always keep this seasoned vinegar stocked in my pantry for dressings and salads. You can substitute white wine vinegar or lemon juice as well.
  • Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the raw onion in the salad.
  • Granulated Sugar

  • You can use Miracle Whip instead of the mayonnaise if you wish.
  • Use a vegan mayonnaise to make this recipe plant-based.
  • Instead of suagr you can substitute honey, maple syrup, or another sweetener of your choice. Or skip it altogether.

How To Make This Recipe

Step 1: Peel (if desired) your cucumbers, and cut them into thin slices.

Step 2: Thinly slice the onions, and add them in the bowl with the cucumbers.

Step 3: Add in the remaining ingredients: the mayonnaise, rice wine vinegar, sugar, salt, pepper, and fresh dill. Mix well to combine all ingredients into a creamy dressing.
