I’ve been a huge Trader Joe’s fan since I lived down the street from one in California! I would walk there every other day and get fresh produce and my favorite snacks. My ultimate favorite? TJ’s bruschetta sauce which is the base for this fantastic pasta salad.

This recipe has it all – fresh greens, flavorful chickpeas, soft orzo pasta, and dressed with the best tomato-based ‘dressing.’ You can make this recipe for under $10, and it makes 6-8 servings, so it’s a great inexpensive side!

What’s In This Easy 4 Ingredient Pasta Salad with Trader Joe’s Ingredients

  • Baby Spinach – In the produce department, I opted for organic spinach to make this recipe. You can use regular spinach if you’d like.
  • Trader Joe’s Bruschetta Sauce – at my Trader Joe’s this bruschetta sauce is hear the hummuses, in the refrigerated section. TJ’s does have other bruschetta, however this one makes the best dressing!
  • Trader Joe’s Greek Chickpeas – in the canned food section, don’t pass up these chickpeas! They are salty, herby, and go really well in this salad.
  • Orzo Pasta – this little dried pasta can be found with the other pastas. It’s the perfect texture for this recipe… however you can substitute another pasta if desired.

This plant-based orzo pasta salad is a simple way to eat vegan with Trader Joe’s ingredients. I’m all about making recipes plant-based when I can. Vegan cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right.

How To Make This Easy Vegetarian Trader Joe’s Salad with Orzo

  1. Cook orzo according to package directions. Drain, rinse under cold water so the pasta cools, and set aside.
  2. Wash spinach, and roughly chop it.
  3. In a large bowl, add the chopped spinach, cooked orzo, Bruschetta Sauce, and Greek Chickpeas. Toss well to combine.
  4. Serve immediately. Store leftovers in an airtight container for up to 2 days.

  • This pasta salad recipe is vegan, vegetarian, egg free, and dairy free.
  • For a gluten free version, substitute the orzo for a certified gluten free pasta instead.
