We have been loving feta cheese lately! Its such a great addition to salads, wraps, or pasta – and now grilled cheese! Since I work from home, I love coming up with quick and easy lunches that I can make on my lunch breaks. This feta grilled cheese fits the bill: ready in 10 minutes, only a few simple ingredients, and totally delicious and satisfying.
Feta cheese doesn’t exactly melt like mozzarella or cheddar, so you won’t get any glorious cheese pulls with this sandwich. It does however bring a ton of extra flavor to your sandwich, and makes any grilled cheese feel like a grown up treat.

- Bread: any kind you would normally use for a sandwich. You can use white, wheat, rye, gluten free, sourdough, or pumpernickel.
- Feta cheese: I used a crumbled feta, but if you buy a block of feta soaked in water, make sure to pat it dry and slice thin before adding it to the sandwich.
- Vegetables: I added thick sliced tomatoes, but you can add any of your favorites: peppers, kalamata olives, or spinach would also be delicious.
- Butter or cooking spray for spraying the pan: you can also use olive oil for a vegan version.
The Best Non-Stick Pan for Grilled Cheese Sandwiches
As a food blogger (and general cooking enthusiast!), I use my pots and pans daily. Having a really good non-stick pan is essential in the kitchen, especially for grilled cheeses. I love these non-stick pans which are stainless steel, have no Teflon coating, and are so durable you can use metal utensils on them! I used my non-stick pan for this grilled cheese, but I also have their non-stick griddle pan which I love for pancakes and crepes, and a non-stick wok which is prefect for stir fries. Make Grilled Cheese with Feta Vegetarian for a Healthy Version
This vegetarian grilled cheese with feta recipe is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegetarian cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. By building meals around vegetarian pantry staples and swapping in a few plant-based ingredients you can make healthier meals for you and your family. How Do I Make Feta Grilled Cheese?
- Heat a skillet or pan over low heat.
- Assemble the sandwich: layer thick sliced tomatoes (or any other toppings) and add the feta cheese sandwich. Butter the outside pieces of bread, and place in the skillet.
- Toast on low heat for 3 or 4 minutes until bottoms of the grilled cheese begins to brown. Flip, and continue to cook for another 2 or 3 minutes. To get the inside of the sandwich hot, you can place a lid over the pan after flipping the sandwich. Once the bread has browned, remove pan from heat, carefully slice sandwich, and enjoy!

- This recipe is naturally vegetarian – just make sure you use vegetarian ‘toppings’ in the sandwich.
- For a gluten free grilled cheese, use certified gluten free bread.
- To make vegan or dairy free, just substitute out the feta cheese for a vegan version, and the butter for olive oil to toast the bread.
