This feta grilled cheese recipe is a quick meal, and super versatile. You can add your favorite ingredients into the sandwich like sliced tomato, roasted red pepper, or a spread of flavorful pesto.
Optional Other Additions: roasted red pepperspinach, pesto, kalamata olives, etc.
Instructions
Heat a skillet or pan over low heat.
Assemble the sandwich: layer thick sliced tomatoes (or any other toppings) and add the feta cheese sandwich. Butter the outside pieces of bread, and place in the skillet.
Toast on low heat for 3 or 4 minutes until bottoms of the grilled cheese begins to brown. Flip, and continue to cook for another 2 or 3 minutes. To get the inside of the sandwich hot, you can place a lid over the pan after flipping the sandwich. Once the bread has browned, remove pan from heat, carefully slice sandwich, and enjoy!
