Mediterranean Hummus Toast with Marinated Vegetables (Vegan, Gluten Free)

This Mediterranean Hummus Toast is topped with fresh marinated vegetables and makes an easy and healthy breakfast or lunch!  A great no-cook meal that is perfect for a simple and delicious breakfast, lunch, dinner, or snack!

Move over avocado toast, I officially have a new favorite breakfast. This Mediterranean Hummus Toast is the perfect way to brighten your morning with color and flavor. The quick marinated vegetables are ready in about 5 minutes, and give this toast a fresh crunch!  This makes a perfect fast snack or meal anytime!

For this recipe, you can use homemade hummus or just store bought. I love hummus because it’s such a versailte dip and you can add any flavors you’d like!  I have some fantastic recipes for Green Goddess Hummus, Roasted Garlic Hummus, and even a healthy oil free hummus in the instant pot.

What’s In This Easy Vegan Hummus Toast with Mediterranean Veggies?

  • Bread: I used a homemade sourdough because that is what we always have on hand. I make a fresh loaf every week, which is great for toasts, garlic bread, or having a slice with soup.
  • Hummus: store bought or homemade, whatever you have on hand!
  • Vinegar and Sugar: for the marinade. I used red wine vinegar and a teaspoon of regular granulated sugar.  But you can substitute a natural sweetener (like honey or maple syrup) if you prefer.
  • Vegetables for Topping: I went with a mix of cucumber, radish, red onion, tomato, and green onion… because that is what I pulled from the garden.

I also threw a few extra chickpeas on top of mine, becuase I had some cooked chickpeas in the fridge – but that is totally optional!  If you are making you own hummus, I’d definitely recommend cooking your own chickpeas. I cook mine in the Instant Pot and it couldn’t be easier.  No soaking required!

How Do I Make This Mediterranean Hummus Toast Recipe?

  1. In a bowl, add the cucumber, radishes, tomato, red wine vinegar, sugar, and green onions. Allow to sit and quickly marinate for 5 minutes.
  2. Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
  3. Add a scoop of the marinated Vegetables to the top of each toast, garnishing with extra green onions or chickpeas if desired.
  4. Serve as a healthy breakfast or lunch, and enjoy!

Ingredients
  

  • 1/2 cucumber chopped
  • 2 radishes sliced
  • 1/4 cup red onion sliced
  • 1 medium tomato diced
  • 1/3 cup red wine vinegar
  • 1 teaspoon sugar
  • 2 green onions chopped
  • 4 slices sourdough bread use gluten free if GF
  • 1/2 cup hummus

Instructions
