This Mediterranean Veggie Toast is topped with fresh marinated vegetables and makes an easy and light breakfast or lunch! A great no-cook meal that is perfect for a simple and delicious breakfast, lunch, dinner, or snack!
In a bowl, add the cucumber, radishes, tomato, red wine vinegar, sugar, and green onions. Allow to sit and quickly marinate for 5 minutes.
Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
Add a scoop of the marinated Vegetables to the top of each toast, garnishing with extra green onions or chickpeas if desired.
Serve as a light breakfast or lunch, and enjoy!
