For this recipe, you can use homemade hummus or just store bought. I love hummus because it’s such a versatile dip and you can add any flavors you’d like!

- Bread: I used a homemade sourdough because that is what we always have on hand. I make a fresh loaf every week, which is great for toasts, garlic bread, or having a slice with soup. If you don’t have a sourdough starter already made, you can easily buy starter here! If you are gluten free, make sure to use GF bread.
- Hummus: make your own or buy online, whatever you have on hand! If you don’t have fresh hummus, this amazing vegan & keto shelf-stable hummus is a great substitute!
- Red Wine Vinegar: I used red wine vinegar for the marinade to give this dish a really nice bright Mediterranean flavor – for that, this red wine vinegar is my go-to!
- Organic Granulated Sugar or Agave Syrup: I used regular granulated sugar, but you can substitute a natural sweetener (like honey or maple syrup) if you prefer. I really like using this raw organic agave syrup which is rediculously inexpensive online!
- Vegetables for Topping: I went with a mix of cucumber, radish, red onion, tomato, and green onion… because that is what I pulled from the garden.
How Do I Make This Veggie Toast Recipe?
- In a bowl, add the veggies: I used cucumber, radishes, tomato, and green onion. Add the red wine vinegar and sugar. Allow to sit and quickly marinate for 5 minutes.
- Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
- Add a scoop of the marinated Vegetables to the top of each toast, garnishing with extra green onions or chickpeas if desired.
- Serve as a healthy breakfast or lunch, and enjoy!

Ingredients
- 1/2 cucumber chopped
