Move over avocado toast, we officially have a new favorite breakfast on this homestead. Veggie Toast is the perfect way to brighten your morning with color and flavor – using any seasonal vegetables.
 
The quick marinated veggies ready in about 5 minutes, and give this toast a fresh crunch!  This makes a perfect fast snack or meal – a great light lunch or work-from-home snack idea.

Use Fancy Hummus, Or Anything You Have on Hand!

For this recipe, you can use homemade hummus or just store bought. I love hummus because it’s such a versatile dip and you can add any flavors you’d like! 

I have some fantastic recipes for Green Goddess Hummus, Roasted Garlic Hummus, and even a oil free hummus in the instant pot.

What’s In This Easy Vegan Hummus Toast with Mediterranean Veggies?

  • Bread: I used a homemade sourdough because that is what we always have on hand. I make a fresh loaf every week, which is great for toasts, garlic bread, or having a slice with soup.
  • Hummus: make your own or buy online, whatever you have on hand!
  • Red Wine Vinegar: I used red wine vinegar for the marinade to give this dish a really nice bright Mediterranean flavor – for that, red wine vinegar is my go-to!
  • Organic Granulated Sugar: I used regular granulated sugar,  but you can substitute a natural sweetener (like honey or maple syrup) if you prefer. 
  • Vegetables for Topping: I went with a mix of cucumber, radish, red onion, tomato, and green onion… because that is what I pulled from the garden.
I also threw a few extra chickpeas on top of mine, because I had some cooked chickpeas in the fridge – but that is totally optional!  If you are making you own hummus, I’d definitely recommend cooking your own chickpeas. I cook mine in the Instant Pot and it couldn’t be easier.  No soaking required!
 

How Do I Make This Veggie Toast Recipe?

  1. In a bowl, add the veggies: I used cucumber, radishes, tomato, and green onion. Add the red wine vinegar and sugar. Allow to sit and quickly marinate for 5 minutes.
  2. Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
  3. Add a scoop of the marinated Vegetables to the top of each toast, garnishing with extra green onions or chickpeas if desired.
  4. Serve as a light breakfast or lunch, and enjoy!

  • To make this recipe gluten free, just make sure to use a gluten free bread for the base, and check the ingredients if you use a prepared hummus.  Always ensure your products are certified gluten free if you cannot eat wheat.

Ingredients
