The quick marinated cucumbers are ready in about 5 minutes, and give this toast a fresh crunch! This makes a perfect fast snack or meal anytime.

For this recipe, you can use homemade hummus or just store bought. I love hummus because it’s such a versatile dip and you can add any flavors you’d like! I have some fantastic recipes for Green Goddess Hummus, Roasted Garlic Hummus, and even a healthy oil free hummus in the instant pot.

What’s In This Vegan Hummus Toast with Quick Pickled Cucumbers?

  • Bread: I used a homemade sourdough because that is what we always have on hand. I make a fresh loaf every week, which is great for toasts, garlic bread, or having a slice with soup.
  • Hummus: store bought or homemade, whatever you have on hand!
  • Vinegar and Sugar: for the marinade. I used red wine vinegar and a teaspoon of regular granulated sugar. But you can substitute a natural sweetener (like honey or maple syrup) if you prefer.
  • Cucumbers: These work great with either large cucumbers or smaller persian cucs. You can choose to peel them or keep the skin on – what ever you prefer!

How Do I Make This Mediterranean Hummus Toast Recipe?

  1. In a bowl, add the cucumber, red wine vinegar, sugar, and salt. Allow to sit and quickly marinate for 5 minutes.
  2. Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
  3. Add a scoop of the marinated cucumbers to the top of each toast, garnishing with extra salt or pepper if desired.
  4. Serve as a healthy breakfast or lunch, and enjoy!

  • 1 cucumber thinly sliced
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar
  • 1/4 teaspoon salt
  • 2 tablespoons water
  • 4 slices sourdough bread use gluten free if GF

    • Hi Kirsty, sure! It’s to cover the vegetables so the vinegar mixture is over the top. Depending on what bowl you use for the vinegar you may not need to add the water. Let me know how the recipe goes!
