The quick marinated cucumbers are ready in about 5 minutes, and give this toast a fresh crunch! This makes a perfect fast snack or meal anytime. It’s great in the summer if you are overloaded with garden cucumbers, or just fantastic to have when cucs or hummus is on sale!

This hummus toast recipe is the perfect way to use those extra garden cucumbers.  Throughout the summer our garden is overloaded with cucumber plants all ripening at once.  I make this garden fresh toast recipe with my extra cucumbers and a tasty meal is ready in no time.

  • Bread: I used a homemade sourdough because that is what we always have on hand. I make a fresh loaf every week, which is great for toasts, garlic bread, or having a slice with soup.
  • Hummus: store bought or homemade, whatever you have on hand!
  • Vinegar and Sugar: for the marinade. I used red wine vinegar and a teaspoon of regular granulated sugar. But you can substitute a natural sweetener (like honey or maple syrup) if you prefer.
  • Cucumbers: These work great with either large cucumbers or smaller Persian cucumbers. You can choose to peel them or keep the skin on – what ever you prefer!

How Do I Make This Hummus on Toast with Veggies Recipe?

  1. In a bowl, add the cucumber, red wine vinegar, sugar, and salt. Allow to sit and quickly marinate for 5 minutes.
  2. Toast the sourdough bread, and top each slice with about 2 tablespoons of hummus.
  3. Add a scoop of the marinated cucumbers to the top of each toast, garnishing with extra salt or pepper if desired.
  4. Serve as a quick breakfast or lunch, and enjoy!

    Can you clarify what the 2tbsp of water is for? I’m assuming it’s the pickling juice? Making this now, it looks so good.

    1. Hi Kirsty, sure! It’s to cover the vegetables so the vinegar mixture is over the top. Depending on what bowl you use for the vinegar you may not need to add the water. Let me know how the recipe goes!
