This rice cooker yellow rice recipe is a bright and satisfying side dish made with rice, fresh vegetables, & spices that cooks in the rice cooker!  This all purpose rice pilaf side dish is great with any kind of entrée.  And it’s vegan, gluten free, and made in one pot.
 
It’s easy, convenient, delicious, and goes great with just about anything.  I love serving it with our Vegan Shawarma Bowls or Sheet Pan Fajitas.

This rice cooker yellow rice recipe is the perfect side dish for any meal. And I love that it cooks all in one pot for a convenient side dish. I just made this recipe last week for shawarma night and it was a huge hit on out homestead.
 
This recipe is inspired based on yellow Spanish rice – but it goes great with a variety of cuisines. Plus I used frozen veggies: corn, peas, and bell peppers- in the mix for the easiest side dish ever. Add everything to the rice cooker, stir, and cook… and you side dish is served!

What’s In This Rice Cooker Yellow Rice?

  • Basmati Rice: I really love using basmati rice in most of my dishes.  Basmati rice is a very long-grain rice, and has a really nice texture in this cooked rice dish.
  • Corn: you can use fresh, canned, or frozen (I used frozen and it turned out amazing)
  • Peas: I used frozen also
  • Bell Pepper: fresh or frozen works just fine!
  • Chili Powder: for a really nice flavor in this dip – the chili powder isn’t spicy but will give you a rich and bright flavor.
  • Onion Powder: adds a delicious and savory flavor to this dish as well, and the onion powder pairs nicely with the raw onion in the salad.
  • Turmeric – a staple in our spice cabinet! I try to add a teaspoon of turmeric into soups, stews, and my rice dishes too.
  • Sea Salt
  • Adobo Seasoning: a really fantastic blend of salt, pepper, garlic, and spice! I like to get one that doesn’t have a lot of salt it in, so I can control the amount of salt going into the dish.

How To Make Yellow Rice in the Rice Cooker

  • Add all ingredients to a rice cooker, and stir well to combine.
  • Set cook time for normal mode or 35 minutes for manual mode.
  • Once rice has finished cooking, fluff with a fork and serve.
  • Store leftovers in an airtight container for up to 3 days.

Ingredients
  

  • 1 tablespoon vegetable oil
  • 2 cups basmati rice
  • 1/2 cup sweet corn
  • 1/2 cup peas
  • 1/2 cup bell pepper
  • 1 teaspoon chili powder
  • 1 teaspoon onion powder
  • 1 teaspoon turmeric
  • 1/2 teaspoon Sea Salt
  • 2 cups water
  • Adobo spice to taste
