A fantastic lunch or dinner option – serve with a side salad and dig in.  You can make your own oat milk with 2 ingredients, or use a store bought oat milk (just make sure it’s unsweetened).

OK this oat milk mac and cheese is a fantastic savory dish that is a great recipe to use with oat milk. Mac and cheese is one of my favorite-est foods ever so you know I had to make this lighter version.  Oat milk is one of the best plant milks around because it’s vegan, gluten free, and costs pennies to make at home.  My unsweetened oat milk recipe is a fantastic step-by-step guide for making oat milk at home… or you can use store-bought oat milk which is equally as delicious!

Make This Mac and Cheese with Store-Bought or Homemade Oat Milk!

You can absolutely use an unsweetened store-bought oat milk, or you can easily make it yourself.  All you need is oats, water, a strainer, and a blender.  My unsweetened oat milk recipe is here if you want to try it yourself.  Or you can get oat milk at the store or this delicious version online here.  Either way, ooey gooey delicious oat milk mac and cheese is coming your way.

How Do I Make This Gluten Free Mac and Cheese with Oat Milk?

  1. Bring a large pot of water to a boil, and cook pasta according to package instructions.  Drain and set macaroni aside.
  2. In a large pot, heat the olive oil, ground mustard, salt, pepper, and oat milk over low heat.  Cook until oat milk is just bubbling, then reduce to a simmer.
  3. Add in the cheeses and stir well until all have melted into the oat milk.  Add the cooked macaroni to the cheese sauce, taste and add salt and pepper if needed, and enjoy.

Ingredients
  

  • 1 lb macaroni use gluten free if you avoid wheat
  • 2 tablespoons olive oil
  • 1 teaspoon ground mustard
  • 1/2 teaspoon Himalayan sea salt
  • 1/4 teaspoon pepper
  • 2 cups oat milk
  • 1 1/2 cups cheddar cheese *or see below Recipe Notes for my vegan cheese sauce recipe
  • 8 ounces Velveeta or other melty cheese
  • 1/2 cup parmesan cheese
  • Himalayan Sea Salt and Pepper to Taste

Instructions
