- Oat Milk: which you can make yourself with some water and old fashioned oats, or use store-bought. If you don’t want to make oat milk yourself, unsweetened oat milk has the perfect texture for this mac!
- Macaroni Noodles
- Olive Oil
- Mustard Powder: for a wonderful sharp flavor, I like this mustard powder best!
- Salt: We like to use pink Himalayan sea salt.
- Black Pepper: like salt, I only use really good pepper corns, I like tellicherry pepper corns because they have a fresh spicy taste when they are ground. There are a lot of varieties but I like tellicherry peppercorns best.
- Cheddar or Melty Cheese: You can use cheddar, shredded cheese blends, or even creamy Velveeta for this recipe, or another melty cheese alternative. You can use a plant-based cheese for a vegan substitute as well.
- Parmesan Cheese: for a bright and sharp finish on this mac! I love adding this parmesan cheese to my mac and cheese recipes to give it that little extra kick of flavor.

- To make this recipe gluten free, Make sure the oats you are using are certified gluten free. While oats are naturally gluten free, there can be cross-contamination during processing, so always make sure your oats have the Certified GF stamp on the packaging if you must avoid wheat.

How Do I Make This Easy Mac and Cheese with Oat Milk?
- Bring a large pot of water to a boil, and cook pasta according to package instructions. Drain and set macaroni aside.
- In a large pot, heat the olive oil, ground mustard, salt, pepper, and oat milk over low heat. Cook until oat milk is just bubbling, then reduce to a simmer.
- Add in the cheeses and stir well until all have melted into the oat milk. Add the cooked macaroni to the cheese sauce, taste and add salt and pepper if needed, and enjoy.

Ingredients
- 1 lb macaroni use certified gluten free if needed
- 2 tablespoons extra virgin olive oil
- 1 teaspoon whole grain mustard
- 1/2 teaspoon Sea Salt
- 1/4 teaspoon Black Pepper
- 2 cups unsweetened oat milk use certified gluten free if needed
- 1 1/2 cups cheddar cheese *or see below Recipe Notes for my vegan cheese sauce recipe
- 8 ounces Velveeta
- 1/2 cup parmesan cheese
- Sea Salt and Black Pepper
