This Garlic Mushroom Toast recipe is a savory filling breakfast with sautéed mushrooms and herbs. Hearty mushrooms are fried with herbs and garlic, and topped on freshly toasted bread of your choice.

It’s a fantastic weekend meal ready in about 15 minutes. A simple and easy breakfast or brunch idea!

This garlic mushroom toast recipe is a bright and herby breakfast, and one of our go-to weekend brunches. I made this for our New Year’s brunch this year, and we both gave it a full 10/10.

Make Mushroom Toast Vegan for a Plant-Based Version

This vegan mushroom toast is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegan cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. By building meals around vegan pantry staples and swapping in a few plant-based ingredients you can make better meals for you and your family.

  • Mushrooms & Parsley
  • Extra virgin olive oil
  • fresh garlic cloves
  • Herbs de Provence: my favorite spice blend! This French blend has a mix of rosemary, thyme, sage, and savory for a wonderful and complex flavor.
  • Red Chili Pepper Flakes: for a little heat! I like to add a few shakes to this recipe to give this dish a nice complex depth of flavor.
  • Sandwich Bread – use a gluten free bread if you can’t eat wheat. I like to make my own bread, and they have some great artisan bread gluten free mixes out there too!

Cozy Vegan Breakfast Recipes for the WIN!

This vegan garlic mushroom toast recipe is great for a quick cozy weekend breakfast, brunch, or brinner (breakfast for dinner!).  They are the perfect recipe for brunch guests, or just for getting the whole family together to enjoy a slow weekend meal. These toasts are also great for having company over for a holiday brunch as well.

How Do I Make This Vegan Mushroom Toast Recipe?

  1. In a large pan, heat the olive oil over medium heat. Add the garlic and fry for 3-4 minutes until it begins to brown at the edges. Add the mushrooms, herbs de Provence, and sea salt, and sauté for 5 minutes more until the mushrooms begin to shrink. 
  2. Lower heat, cover, and sauté mushroom’s for 4-5 minutes more.
  3. Toast the bread in a toaster or under the broiler for 3 minutes. Top each slice of toast with 1/4 of the mushroom mixture, and add fresh parsley and red pepper flakes to garnish.  Enjoy!

Ingredients
  

  • 1 tablespoon olive oil
  • 4 cloves garlic minced
  • 8 ounces mushrooms sliced
  • 1 teaspoon Herbes de Provence
  • 1/4 teaspoon sea salt
  • 4 slices gluten free bread
  • 1/2 cup fresh parsley chopped
  • 1/4 teaspoon crushed red pepper flakes

Instructions
 

  • In a large pan, heat the olive oil over medium heat. Add the garlic and fry for 3-4 minutes until it begins to brown at the edges. Add the mushrooms, herbs de Provence, and sea salt, and sauté for 5 minutes more until the mushrooms begin to shrink.
  • Lower heat, cover, and sauté mushroom’s for 4-5 minutes more.
  • Toast the bread in a toaster or under the broiler for 3 minutes. Top each slice of toast with 1/4 of the mushroom mixture, and add fresh parsley and red pepper flakes to garnish.  Enjoy!
