This Flaxseed Porridge recipe is a new favorite in our household!  My husband is a big oatmeal lover, but me… not so much!  I do really like overnight bircher muesli, but I usually am looking for a warm and hearty breakfast in the morning. This flax meal porridge hits all the marks: creamy, comforting, simple, all-natural, and SO good for you!

If you’ve never enjoyed flaxseeds – highly recommend that you add them into your meals!  They are great stirred into breakfasts, blended into smoothies, and baked into muffins and pancakes.  They’re flavorful and nutty AND are amazing superfoods. This vegan flaxseed oatmeal is a simple way to get extra veggies in your diet. I’m all about making recipes plant-based when I can. Vegan cooking does NOT have to be bland, boring, or flavorless… It’s quite the opposite when done right. By building meals around vegan pantry staples and swapping in a few plant-based ingredients you can make better meals for you and your family.

  • Flaxseed Meal: Sweet, nutty, and delicious. I always add a scoop in my oatmeal and smoothies.
  • Milk – I used unsweetened Almond Milk for my version of this recipe.
  • Almond Flour or Almond Meal – You can buy pre-ground almond flour (I make a wicked pie crust out of them!) or you can use any leftovers from making nut milk for a great no-waste recipe.
  • Maple Syrup
  • Cinnamon: which gives this breakfast a subtle spice-y flavor!  I love to add in a pinch for extra warmth and depth of flavor.
  • Apples, or any Fruit of your choice
  • Pinch salt
  • Nuts for garnish, I used walnuts

How Do I Make Oatmeal with Flax Seeds?

  1. In a sauce pan, add all ingredients and heat on low. Constantly stir for a few minutes until the mixture is hot, but not quite bubbling.
  2. Transfer warm porridge to a dish a garnish with extra fruit, cinnamon, and nuts if desired.  Enjoy!

Ingredients
  

  • 1 cup plain unsweetened almond milk
  • 1/4 cup ground flaxseeds
  • 1/4 almond meal or crushed nuts (you can use any leftovers from making nut milk!)
  • 1 tablespoon agave
  • 1/2 teaspoon cinnamon
  • 1/2 cup fruit I used sliced apples
  • Pinch Sea Salt
  • Nuts for garnish I used walnuts
