What Is Tzatziki Sauce Anyway?
Tzatziki is a traditional Greek dip made with cucumber, Greek Yogurt, dill, garlic, and lemon juice or vinegar. I make a killer vegan tzatziki which we love to eat on our homestead. I love adding a dollop or tzatziki on pitas, shawarmas, or just as a dip for veggies. Whether you use a yogurt-based tzatziki or a dairy-free version like this one, it tastes AMAZING in a grilled cheese! It adds a layer of creamy garlicky goodness… you can’t go wrong with a tzatziki grilled cheese.
The BEST Vegan Cheese That Melts
Nurishh was kind enough to send me some samples of their new vegan cheeses: mozzarella, provolone, and cheddar. And let me tell you – these are the best vegan dairy free cheeses I have ever had (and I’m not just saying it to be nice!). The flavor is spot on like real cheese, my husband couldn’t believe it was made from plants, and it actually melts! This is the first vegan cheese I’ve had that melts like a dream (see the pics, it’s for real). So as a totally impartial judge of cheese, these get a full 10/10 from me. AND they have half of the sodium of real cheese, so my hubby could actually enjoy them too, we are major fans of this and am stocking up next time we are at the store.
What’s In This Grilled Cheese with Tzatziki Sauce?
- Olive Oil: I like to use this fruity Zoe olive oil which has a fantastic flavor and deep color- it’s really inexpensive online here, so I keep a few liters stocked up in my pantry. For the quality of oil you get, it’s an excellent value, I would highly recommend!
- Gluten Free Bread: use whatever kind of bread you or your family love. I am a huge fan of baking my own bread (check out my 7-day guide to easy sourdough here!) or you can use a gluten free bread mix like this one if you are feeling adventurous and want to try to bake your own.
- Kale: or any fresh leafy green of your choice… for some crunch and because #healthy
- 2 slices of cheese: I used this amazing vegan & dairy free Nurishh cheese (which I LOVE!) but use any melty cheese like: American slices, mozzarella, or provolone.
- Tzatziki Sauce: My vegan tzatziki recipe is here!
How Do I Make Creamy Garlic Grilled Cheese?
- Brush one side of bread with olive oil. Place it oil-side down on a plate. Add the sauteed kale, 2 slices of cheese, and spread a thin layer of the tzatziki sauce on top of the cheese. Place the other side of bread on top, and brush the top side with olive oil.
- Press in a panini press for 5-10 minutes until bread is toasted golden brown, and cheese is warm and melty in the middle. Slice, mangia, and enjoy!
