It’s National Grilled Cheese Day everyone! I’ve always been a fan of grilled cheeses, but decided to make today’s totally #extra! I added some tzatziki sauce (which is a traditional Greek creamy garlic and dill sauce) and some fresh kale. We made tofu shawarmas the other night and I had some tzatziki sauce left over… and the Tzatiki Grilled Cheese was born! Oh, and did I mention that this grilled cheese is both vegan and dairy free? I used Nurishh cheese for my sandwich (which they kindly sent me, along with this awesome panini press) and a dairy free tzatziki. But don’t worry – if you aren’t vegan or dairy free you can use regular cheese and classic tzatziki sauce, it’s ALL good!

What Is Tzatziki Sauce Anyway?

Tzatziki is a traditional Greek dip made with cucumber, Greek Yogurt, dill, garlic, and lemon juice or vinegar. I make a killer vegan tzatziki which we love to eat on our homestead. I love adding a dollop or tzatziki on pitas, shawarmas, or just as a dip for veggies. Whether you use a yogurt-based tzatziki or a dairy-free version like this one, it tastes AMAZING in a grilled cheese! It adds a layer of creamy garlicky goodness… you can’t go wrong with a tzatziki grilled cheese.

The BEST Vegan Cheese That Melts

Nurishh was kind enough to send me some samples of their new vegan cheeses: mozzarella, provolone, and cheddar. And let me tell you – these are the best vegan dairy free cheeses I have ever had (and I’m not just saying it to be nice!). The flavor is spot on like real cheese, my husband couldn’t believe it was made from plants, and it actually melts! This is the first vegan cheese I’ve had that melts like a dream (see the pics, it’s for real). So as a totally impartial judge of cheese, these get a full 10/10 from me. AND they have half of the sodium of real cheese, so my hubby could actually enjoy them too, we are major fans of this and am stocking up next time we are at the store.

How Do I Make Creamy Garlic Grilled Cheese?

  1. Brush one side of bread with olive oil. Place it oil-side down on a plate. Add the sauteed kale, 2 slices of cheese, and spread a thin layer of the tzatziki sauce on top of the cheese. Place the other side of bread on top, and brush the top side with olive oil.
  2. Press in a panini press for 5-10 minutes until bread is toasted golden brown, and cheese is warm and melty in the middle. Slice, mangia, and enjoy!

Ingredients
  

  • 1 teaspoon olive oil
  • 2 slices bread use gluten free if you avoid wheat
  • 1/2 cup sauteed kale
  • 2 slices cheese I used Nurishh vegan & dairy free cheese
  • 2 tablespoons tzatziki sauce use dairy free version if vegan
