This tzatziki grilled cheese is loaded with toasted bread, melted cheese, and a creamy garlic sauce! This Greek-inspired grilled cheese is made with American cheese and feta for a delicious tangy twist on a classic sandwich.
Brush one side of bread with olive oil. Place it oil-side down on a plate.
Add a few leaves of baby spinach, 1 slice of American cheese, a thin layer of the tzatziki sauce, and crumbled feta to top. Place the other side of the bread on top of the feta, and brush the top side with olive oil.
Heat a skillet over medium-low heat until the pan is hot. Add the butter until melted. Add the grilled cheese sandwich, cook for 3-4 minutes until the bread is golden brown, and flip
Cook the second side for another 3-4 minutes until toasted, and the cheese begins to melt.
Remove from the pan, slice in half, and enjoy!

Additions and SubstitutionsYou can make your own tzatziki, or use store-bought. I've seen many new varieties of tzatiki in the refrigerated deli section of my grocery store near the other dips (like salsa).Add fun fillings - roasted red peppers, sliced kalamata olives, or thinly sliced tomatoes.You can use all American cheese, or add another sprinkle of your cheese of choice inside the sandwich.
