A No-Cook Tofu Recipe That’s Perfect for Summer
This no-cook marinated tofu feta cheese is a quick and simple recipe. I love a good no-cook recipe for those days when I’m not feeling like standing around the stove, or for summer nights when it’s too hot to cook. This vegan feta substitute comes together in about 5 minutes, and doesn’t require the stove or microwave to make. Just use a few pantry staple ingredients and you have a healthy meal ready the next day. And very little to clean up afterwards… an added bonus!

- Shelf Stable Tofu – I have been LOVING these shelf-stable tofu packs from Amazon. I literally have 3 cases of them in my pantry as we speak. They are an inexpensive and healthy way to get some plant protein in. The texture of this extra firm tofu is perfect for this recipe, no pressing required!
- Olive Oil: I like to use this fruity Zoe olive oil which has a fantastic flavor and deep color- it’s really inexpensive online here, so I keep a few liters stocked up in my pantry. For the quality of oil you get, it’s an excellent value, I would highly recommend!
- Actually GOOD Bottled Lemon Juice: Use fresh lemons if you have it, or this really great bottled lemon that you can keep in your pantry if you don’t have fresh lemons. This organic lemon is great for dressings, dips, and even cocktails – and it tastes fresh, which is great to have around if you don’t use lemon juice everyday but still want to keep some around.
- Light Sweet Miso Paste – I love this light and sweet miso paste, I keep a few packs in my pantry for recipes when I want to add a little umami flavor in a pinch. Miso is a paste made from lightly fermented soy beans, and is a classic in soups and Asian dishes. I use this light sweet miso paste, and it adds the perfect amount of flavor to this marinade! It also lasts forever in your fridge or pantry, so I always keep a few around!
- Apple Cider Vinegar, which gives this dressing a little extra tang which is really fantastic! I love using this organic apple cider vinegar with the mother which has a great flavor. I think it gives a nice extra sweetness and depth.
- Oregano: a spice I always put in my marinades! This dried oregano has a bright and earthy flavor, and goes so well with the tofu.
- Tellicherry Peppercorns: Like the salt, it’s amazing the flavor difference you can get with really good tellicherry black pepper. Amazon has a generic brand tellicherry peppercorn which is the same price is buying pre-ground, and has a million times more flavor… so I use these really great tellicherry peppercorns, which I would definitely recommend.

This vegan tofu cheese recipe is a fantastic pantry-staple meal! It uses almost all ingredients you would have in your dry pantry or cupboards – most of which you probably have on hand. How Do I Make Feta Cheese without Dairy?
- Press your tofu – get as much moisture out of the tofu as possible, this press does the trick perfectly!
- Cube the pressed tofu into bite sized pieces. In a shallow baking dish or bowl, mix in the rest of the ingredients until the tofu is covered in the marinade.*
- Allow the tofu to marinate overnight for 8 hours minimum, up to 2 days maximum.
- Serve in any dish you would use tofu in: Tofu Feta Caprese Salad, a vegan cheese board, on toast, or crumble on a salad.
*You can also leave your tofu in the whole block, or crumble it. I prefer cubes, but any texture would work.

- 1/4 cup water
- 1/4 cup fresh squeezed lemon juice
- 1/4 cup olive oil
- 2 1/2 tablespoons Light Sweet Miso Paste
- 2 tablespoons apple cider vinegar
- 1 teaspoon dried oregano
- 1/4 teaspoon freshly ground Tellicherry Black Pepper
Instructions
