This recipe combines my two favorite things: hash browns and an easy weekend breakfast. We’ve been having a crazy heat wave this summer, so instead of turning on the oven, I’ve been cooking some of our favorite recipes in the air fryer instead.

We absolute LOVE our Air Fryer and I’ve been trying all kinds of delicious vegetables in it.  I’ve been having a lot of fun trying out new ways to use it, and let me tell you, the air fryer is made for hash browns and potatoes. These hash browns were an amazing side dish with poached eggs and hollandaise!  The air fryer gets the potatoes crispy on both sides, and tender in the middle.
