When delicata squash is in season, we stock up and enjoy it whenever we can. This easy delicata squash in the air fryer is simple to make, and has an incredible flavor. It tastes like a mix between a butternut squash and a sweet potato. It has bright yellow thin edible skin with green stripes. 

This easy fall side dish is my favorite way to cook delicata squash! The air fryer cooks it up quickly (twice as fast as the oven) and tastes like it’s slow roasted.

  • Delicata squash – A fantastic fall seasonal squash you can find at farmers markets or grocery stores. I got mine from my Misfits Market box. I’ve chosen these great squashes a few times, and always love the flavor. These squashes have a short season for growing – and are available in late summer through early winter.
  • Olive Oil – I like to toss with the squash before adding it to the air fryer.
  • Garlic Powder: I stock up on garlic powder, because I love using it in recipes for added flavor and depth
  • Salt & Black Pepper

Other Great Flavor Add-Ins

I like air frying my squash simply, but you could also add in these great spices for extra flavor.

You can use garlic salt instead of regular for more garlic flavor.

​Top with parmesan cheese.

​Add chili powder or cayenne for a bit of spice.

How To Air Fry Delicata Squash

  1. Prepare the ripe delicata squash: slice the squash in half lengthwise. Scoop out the seeds from the squash halves and discard them. Slice the squash into rings and set aside. No need to peel, you can eat the skin of delicata squash.
  2. In a large bowl, add the squash pieces, olive oil, garlic powder, salt, and pepper. Toss well to combine.
  3. Add squash rings to the air fryer basket in a single layer, and fry at 400 degrees Fahrenheit for 20 minutes, shaking halfway until golden brown. You may need to do this in 2-3 batches depending on the size of your squash.
  4. After cooking time is finished, enjoy as a side dish or toss with your favorite pasta. Store leftovers in an airtight container for up to 3 days.
