In this chocolate version of classic rice Krispie treats, we have two different types of chocolate: cacao powder, and dairy-free dark chocolate chips.

What’s In Rice Crispy Treats with Cacao Powder?

  • Rice Cereal– use normal rice krispies cereal, or a chocolate version of crispy rice cereal instead!
  • Butter – I use unsalted butter for these easy treats. You can also use coconut oil for a plant-based option.
  • Organic Cacao Powder – which is a natural cocoa powder that is unsweetened.
  • Mini Marshmallows –  the gooey marshmallow is the best part! You can use regular or a plant-based marshmallow if desired.
  • Pure Vanilla Extract
  • Dark Chocolate Chips – You can use semi-sweet chocolate chips, milk chocolate chips, or a vegan/plant based variety.

How To Make Chocolate Rice Crispy Treats

  • Line a large 9×9 square baking dish with parchment paper, set aside. Also set aside about 1/2 cup of mini marshmallows, these will be used later in the recipe.
  • In a large pot, add the coconut oil, cacao powder, and the remainder of the marshmallows on low heat.  Stir for about 5-10 minutes until the ingredients have completely melted together.
  • Add the vanilla extract to the melted marshmallow mixture and stir well to combine.
  • Add the rice cereal, half of the chocolate chips, and the 1/2 cup of extra marshmallows to the pot and mix well.
  • Pour the rice cereal mixture into the baking dish – and gently press the rice cereal down.  Make sure to not pack down too hard, as the looser they are placed in the baking dish the softer the treats will be.
  • Sprinkle the top with the last half of the chocolate chips.  Wait for 30 minutes to cool to room temperature, then cut, serve and enjoy! Cover leftovers with plastic wrap or store in an airtight container.
