Our garden is popping this year – and cucumbers are one of our most productive plants!  We’re able to enjoy fresh homegrown cucumbers all summer long… so I’m always looking for new and delicious ways to use them in recipes.

These fresh dill-less pickles are the perfect recipe for your garden cucumbers. They the perfect addition to a sandwich, chickpea burger, pickle pasta salad, or grilled cheese.  Just a note: this is a refrigerator pickle recipe, and not a canning recipe for long-term storage.  If you are looking for a canning recipe, you can find a ton in this great Ball canning guide.

Garden Cucumber Recipes

This no-dill garlic pickle recipe is the perfect way to use those extra garden cucumbers.  Throughout the summer our garden is overloaded with cuc plants all ripening at once.  I make this garden fresh cucumber pickles recipe with my extra cucumbers and a side is ready in no time.

Enjoy that summer garden bounty with this bright and fresh pickle recipe all summer long. There’s nothing better than seasonal produce right out of the garden – if not your garden, then get fresh cucumbers at your local farmer’s market stand.

We also love to make old fashioned cucumbers and onions, tzatziki pasta salad, and our favorite white bean and veggie salad.

Ingredients You’ll Need

  • Cucumbers: you can use English cucumbers to slice diagonally as I did, or pickling cucumbers to cut into spears.
  • White vinegar
  • Pink Himalayan Sea Salt
  • Fresh garlic
  • Coriander, or Cumin Seeds – to give the pickles a nice earthy flavor
  • Fennel Seeds – for brightness and spice
  • Mustard Seeds
  • Red Chili Pepper Flakes: for a little heat! I like to add a few shakes to this recipe to give this dish a nice complex depth of flavor.

Substitutions and Variations

For a spicier variety, you can double the chili flakes for extra heat.

If you don’t have or can’t find all the spices (coriander, fennel seed) you can omit it, and add extra mustard seeds.

How To Make This Recipe

Step 1: Slice cucumbers length-wise into spears. Set them aside and prepare the brine.

Step 2: In a sauce pan, heat the white vinegar, and water over low heat.

Step 3: Add the chopped garlic, salt, chili flakes, fennel seed, and mustard seed. Bring to a boil, then remove from heat.

Step 4: Add the cucumbers to a mason jar (I used wide mouth mason jars).

Step 6: Cover and chill the pickles overnight.

These pickles will keep up to 2 weeks in the refrigerator. This isn’t a long-term canning recipe.

What’s in this pickle brine?

The brine for these dill-free pickles is made from white vinegar, salt, garlic, and spices. I also add a bit of chili flakes for heat, which is optional.

Can you make pickles without dill?

Absolutely – adding extra garlic, spices, and vinegar in the brine adds a nice flavor without any dill. You get a more sour pickle recipe instead!

    My garden is producing cucumbers, but my dill did not thrive this year so I was looking for a pickle recipe that didn’t include dill. I was skeptical when I read the recipe, especially since I’m not a huge fan of fennel, but decided to give it a try. Sliced my cucumber into 1/2” rounds and followed the recipe. They’ve been in the fridge a week or so. Took some out tonight to have with fresh garden tomatoes and WOW! They are so good. Crunchy, tangy, slightly spicy. I went back to pin the recipe and thought I’d lost it. Luckily I remembered my search string. This is definitely a keeper.

    1. Hi Cathy,
      For 6 cucumbers, you should be able to fit them into 2 or 3 pint jars – but that depends on the size and length of your cucumber. If the cucumber is long, I’d recommending halving it to make shorter pickles that will fit in a jar. Or use a large quart sized jar instead.

    Unlike any pickle we’ve had before but absolutely delicious. The only change I made was to add 2 star anise because they look so pretty in the jar.

    I’m going to try this recipe, but one question. The recipe specifies seasoned rice vinegar, but the link to Amazon you provide is for the non-seasoned type. So my question is, does the recipe actually call for seasoned or non-seasoned? Since the recipe doesn’t call for sugar, I’d think you do mean seasoned, because it will provide some sweetness for balance. But given the discrepancy, I thought I’d check to see what you really meant.
