- Peanut Butter: or you can substitute an almond or cashew butter instead. Like my peanuts, I only use unsalted peanut butter.
- Almond Flour or Almond Meal – You can buy pre-ground almond flour online here (I make a wicked pie crust out of them!) or you can use any leftovers from making nut milk for a great no-waste recipe.
- Granulated Sugar: I like this organic sugar for my recipes, I recommend organic sugar for cooking and baking.
- Egg
What If I Don’t Have an Egg?
There are some fantastic pantry alternatives to an egg.
- Applesauce – substitute 1/4 of applesauce for each egg required in recipe
- Flax ‘egg’ – a classic vegan baking hack, mix 1 tablespoon flaxseed meal with 2 tablespoons of water, let sit for 1 minute
- Corn Starch – mix 1 tablespoon corn starch with 3 tablespoons water for each egg in recipe

It uses almost all ingredients you would have in your dry pantry or cupboards – most of which you probably have on hand. Keeping a well-stocked pantry makes it easy to come up with delicious and tasty meals using a few staples you can rotate.

How Do I Make These Cookies?
- Preheat oven to 350 degrees Fahrenheit (180 Celsius). Line a large baking sheet with parchment paper.
- In a large mixing bowl, add the almond flour, peanut butter, sugar, and egg. Whisk until ingredients are well combined.
- Scoop about 1 tablespoon of dough, roll with hands, and place on the baking sheet. (I used a melon baller for consistent sized cookies). Repeat until dough is done.
- Once you have placed all the rolled dough balls on to the baking sheet, press down with a fork to form a pattern.
- Bake for 10-12 minutes, and remove from oven.
- Allow 10 minutes to cool before eating.
