Vegan Apple Walnut Salad with Sweet Dijon Vinaigrette (Gluten Free)

This vegan apple walnut salad is a great lunch or dinner salad or main dish. Full of plant protein, healthy fats, and fresh crisp veggies!  This is a great salad any time of the year, and requires no cooking.  Have a healthy salad (packed with protein) on the table in under 10 minutes.

I love bright & fresh salads all year round, and this awesome vegan apple walnut salad is a treat for any season. The sweet crunchy apples and cabbage pair so well with the herby parsley and soft walnuts. This is a great salad to bring to a party, pot luck, or BBQ.  And its vegan and gluten free,  so everyone at the table will be able to dig in.

The vinaigrette really makes the salad pop. You can use either maple syrup or raw honey to sweeten this dressing natrually without using granulated sugar.  The tangy dressing is so good with the apples and walnuts, each bite is an absolute treat!

What’s In This Apple Walnut Salad?

  • Apple: any variety of your choice.  I used a honey crisp, but use whatever variety you have on hand.
  • Red cabbage: for some color and healthy crunch
  • Celery: for a bright fresh flavor
  • Chickpeas: for some plant protein and a healthy addition to the salad
  • Parsley: the freshness of the herby parsley really brightens up this salad.
  • Walnuts: for healthy fat and a nice crunch.  Bonus points if you lightly toast these before adding to the salad!
  • The Dressing: made quickly from olive oil, apple cider vinegar, dijon mustard, and maple syrup or raw honey.

How Do I Make This Vegan Apple Walnut Salad?

This salad comes togehter in 10 minutes, requires no cooking, and couldn’t be easier to assemble!

  1. In a large bowl, add the apple, cabbage, celery, chickpeas, parsley, and walnuts.
  2. To a mason jar, add all the dressing ingredients. Seal with airtight lid and shake well to combine.
  3. Pour the dressing over the salad, and toss well to combine. Enjoy!

Ingredients
  

For the Salad

  • 1 apple diced
  • 1 cup red cabbage shredded
  • 3 stalks celery diced
  • 1 13.5 ounce can cooked chickpeas, rinsed and drained
  • 1/2 cup fresh Parsley
  • 1/2 cup chopped walnuts

For the Sweet Dijon Vinaigrette

  • 2 tablespoons olive oil
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon Dijon mustard
  • 1 tablespoon maple syrup or raw honey
